Back from Milan, where I had the pleasure of being part of the 50 Best Bars and spending time with some of the most inspiring people in the industry. Always good to exchange ideas, discover new perspectives and see where the bar scene is heading.

WHO’S BEHIND THE FIRE? 🔥
BAR DROP #08 — NIÑO GORDO, BUENOS AIRES 🇦🇷

We started behind the bar.
We’re finishing behind the fire. 🔥

For our final Bar Drop, Buenos Aires is coming to Milan.

@xniniogordox a restaurant born in Palermo in 2017 where Argentine parrilla collides with East and Southeast Asia.

Think Argentine beef over live fire meeting miso, kimchi, gochujang, wasabi, tamarind and Asian techniques.

Niño Gordo is currently No. 21 in Latin America’s 50 Best Restaurants 2025. 🔥

Behind the fire: @germansitz

Chef, co-founder and one half of the duo behind Niño Gordo.
Tonight, he’s leaving Buenos Aires and bringing that fire straight into @salmongurumilano

Buenos Aires → Milan.
From the bar to the kitchen. From cocktails to fire.

The final drop.

WHO’S BEHIND THE BAR? 👀
BAR DROP #07 — NAKED, ATHENS 🇬🇷

On October 6, during @the50bars celebrations, we’re taking over @salmongurumilano with 8 bars and 1 amazing restaurant, 3 continents and one very, very busy bar 🚨💃

Next up: ATHENS. 🇬🇷

And this one comes with something BIG to celebrate. 🚨

@naked.athens has officially made its debut in The World’s 50 Best Bars 51–100 list, landing at No. 76. 🔥🇬🇷

Built around a philosophy of stripping things back to what really matters, Naked puts ingredients, clean flavours, sustainability and Greek hospitality at the centre.

Behind the bar: @thanos_krimpouras & @manosmantza malakitos in action 💃

And they’re not just coming from Athens to pour some drinks.
They’re coming to Milan to fucking CELEBRATE. 🥂🔥

Athens → Milan.
No. 76 in the world.
Two Greeks behind the bar.
One hell of a reason to party. 🇬🇷🍸

WHO’S BEHIND THE BAR? 👀
BAR DROP #06 — SALMON GURU DUBAI 🇦🇪🐟

On October 6, during @the50bars celebrations, we’re taking over @salmongurumilano with 8 bars and 1 amazing restaurant, 3 continents and one very, very busy bar 🚨💃

THIS ONE HITS DIFFERENT.

From Madrid to Dubai.
From Dubai to Milan.

@salmongurudubai was the first international outpost of the Salmon Guru universe 🫰born from the same rebellious DNA, but reimagined with its own identity in the Middle East.

A place where technique and a little bit of madness collide. Or, as Salmon Guru would put it: always swimming against the current. 🐟⚡️

Behind the bar: HABIBI @kevinnahass

Bar Manager of Salmon Guru Dubai and the man leading the Guru madness in the Middle East.
But wait…

Because Kevin isn’t coming alone 😱

Hosting the madness throughout the entire night, we have THE GURU HIMSELF: @diegocabrerabartender 🚨

Founder and creator of Salmon Guru, the man who opened that first little door in Madrid back in 2016 and somehow turned “swimming against the current” into a global cocktail movement. Dubai became his first project outside Spain in 2022 and now the Salmon keeps swimming.

Salmon Guru inside Salmon Guru.

Yeah… this is going to get wild 🐟🔥

Dubai → Milan.
One night only.
