We dont have a full kitchen, just a kichenette so my cooking has gotten super creative.

This is a one pot vegetarian vegetable dish using italian and yellow squash, one whole onion caramalized, a jalapeño (because Gian loves spice), and oregano.

We’ve been trying to eat more oregano because of the health benefits.

Gian said it was super tasty! 😋

A day in Monserrat 🇪🇸 I had such a beautiful spiritual experience here. I felt the Holy Spirit and could not stop crying because of the beauty I felt. 💕
