Before our trip to Japan this autumn, Shinichiro Ikeda and I are hosting a mini duo show & listening session for Emptyset II at SchwipsBar in Berlin!
For the opening, there’ll be a 30-minute live listening session by Shinichiro Ikeda @shinichiro__ikeda (donation-based).
Art pieces, frames made by @erina.mori0228 , and cassette tapes will also be available for purchase.

Day 3 🌿💛

Not every day in hospitality is a busy one… and that’s okay.

Today was a quieter day, which gave me something just as valuable: time.

Time to chat with friends, get to know my guests a little better, listen to their feedback, and enjoy the atmosphere that I dreamed of creating with Kimama.

Every day is different, and that’s part of this adventure. I’m learning, improving, and enjoying every moment along the way.

Now I’m looking forward to the weekend and hoping to welcome many more of you! ☕🍽️🍹

Another beautiful day at Kimama! 💛

Thank you to everyone who stopped by (even from Frankfurt specially for this) whether it was for a coffee, lunch, drinks, or just to say hello. Seeing new faces discover Kimama and welcoming back guests from day one has been incredibly special.

Every smile, every conversation, and every piece of feedback helps me make Kimama even better.

Nach traditioneller japanischer Definition wird für echten Matcha nur Vollschattentee verwendet, und nur das Blattfleisch (Tencha) findet Verwendung. Da der Begriff aber nicht geschützt ist, können auch einfache Grünteepulver aus unbeschatteten Tees oder Halbschattentees als Matcha vermarktet werden.

Gemahlene Tees oder powdered teas sind alle Tees, die nicht beschattet wurden. @postcardteas nennen diese Tees „stonerolled teas“. Großartiger Name! Und: geschützt! ☝🏻
In meiner Masterclass in der @schwipsbar am 30.5. nehmen wir uns fünf sehr unterschiedliche gemahlene Tees vor: Hojicha, Genmaicha mit Maulbeere, Gyokuro, Oolong und Black Matcha. Was verändert sich durch das Mahlen? Wie verhält sich Textur und Aromendichte?

Kakuzō Okakura unterscheidet in „Das Buch vom Tee” drei Stadien des Tees: gekocht, eingeweicht, gerührt. Matcha ist für ihn weniger ein Produkt als eine Zubereitungsart.

Wir verkosten zusammen die jeweils „eingeweichte“ und die „gerührte Version.

Matcha ist nicht gleich Matcha!

In meinem Tasting morgen in der @schwipsbar beschäftige ich mich mit „5 Shades of Matcha“- wir probieren gemahlene Tees jenseits des klassischen grünen Matcha: Hojicha, Genmaicha, Gyokuro, Pu Erh, Black Matcha.

Was passiert, wenn Tee vermahlen wird? Wie verändern sich Textur, Aromendichte, Umami? Darum geht es an dem Nachmittag.
Der Kulturwissenschaftler Kakuzō Okakura unterscheidet in seinem Buch „Das Buch vom Tee“ (die schöne Ausgabe fand ich bei @kos_tea_germany ) drei Stadien: gekochter, eingeweichter, gerührter Tee. Matcha gehört zur letzteren Kategorie — und ist damit in seinen Augen eher eine Zubereitungsart als ein Produkt.

Dazu klassische Wagashi — eine kleine Reminiszenz an meine Zeit als Schülerin der Ueda Sokō Ryō-Teeschule in Hannover. Das war damals immer meine Rettung: die Süßigkeiten aus Reismehl. ;)

Matcha ist dabei, zur Birkin Bag des Tees zu werden.

Als sichtbares Statusobjekt, idealerweise im transparenten Becher. Während Matcha Latte mit Mango oder Erdbeermus durch viele Feeds wandert, lohnt sich mal ein genauerer Blick auf das Produkt selbst.

Die Herstellung ist nämlich ziemlich aufwendig: nur die jüngsten Blätter werden gepflückt, gedämpft, getrocknet, von Stängeln befreit und ausschließlich das feine Blattfleisch vermahlen.

Für ein Gramm Matcha werden rund 8 bis 10 Gramm frisches Blattmaterial benötigt.

Für 40 Gramm Matcha läuft eine Granitmühle etwa eine Stunde.

Matcha ist kein streng geschützter Herkunftsbegriff. Importiertes Blattmaterial (rund die Hälfte des Matcha auf dem Markt stammt aktuell aus China) kann in Japan weiterverarbeitet werden. Nicht jedes „Made in Japan“ ist deshalb automatisch ein vollständig dort gewachsener Matcha. Minderwertiges Grünteepulver wird zudem gerne mit etwas Matcha geblendet. Greenwashing bekommt hier eine ganz eigene Bedeutung.

Dabei ist klassischer Matcha nur ein Teil des Bildes. Auch andere Teesorten lassen sich zu hochfeinem Pulver verarbeiten und aufschlagen.

Am 21. März findet mein 5 Shades of Matcha-Tasting in der @schwipsbar in Berlin-Mitte statt. Im Line-up: Genmaicha von @keiko, Black Matcha von @wildorchard.de, Pu Erh von @matchaninja, Gyokuro von @kanoatea und Hojicha von @yoshien.
Vielleicht kommt noch der Maulbeerblatt-Matcha von Keiko dazu … oder gemahlener Oolong von @postcardteas.

Ich war übrigens mit 17 eine der Schüler*innen der Ueda Sokō Ryō-Teeschule in Hannover — und purer Matcha war damals not my cup of tea. Meine Teelehrerin Frau Nakamura hatte viel Geduld mit mir.
Am liebsten mochte ich die japanischen Süßigkeiten Rakugan, aus Wasanbon, dem japanischen Rohrzucker. Die sind beim Tasting natürlich dabei.
Dann braucht es auch kein Mangopüree.

Matcha mit Fruchtpüree ist übrigens ungefähr so, wie Lachs in Sashimi-Qualität komplett durchzubraten und anschließend mit Ketchup zu essen. #justsaying
