Ube Colada Ube, or purple yam, is a root crop that’s native to Southeast Asia and is a staple ingredient in Filipino desserts. It has an earthy flavor that is reminiscent of vanilla and coconut. It also has a striking purple color! Let’s use it in this Piña Colada flavored with ube! I used a nonalcoholic rum in this recipe: @seirhill ’s limited edition nonalcoholic rum, Biscane, in honor of Christine (@onthemocks ) and the good work that she’s doing in the nonalcoholic space. Cheers to you, Christine! And cheers to @seirhill ! This NA rum is good! I used Ube Simple Syrup and coconut milk in place of the usual cream of coconut. The nuttiness and vanilla flavors of ube worked great with the flavors of molasses from the NA rum! 📚Check out my recipe book “The Mocktail Club” or my recipe deck “Make it a Mocktail” if you want physical copies of recipes! Ingredients: * 2 oz NA Rum (I used @seirhill ) * 1 oz Ube Simple Syrup (1/2 cup water, 1/2 cup sugar, 1 tsp ube extract - boil until sugar is dissolved) * 1 oz coconut milk * 5 oz pineapple juice * Pineapple wedge and cherry for garnish Instructions: 1. Combine all ingredients in a shaker. 2. Add 2 scoops of ice and shake for 20 seconds. 3. Dump the mixture including the ice into a tiki glass. 4. Kagatan The name “Kagatan” is actually from the name of its ingredients: KApe (coffee), GAtas (milk), and TANduay (a popular brand of rum in the Philippines). I’d like to think of it as the Filipino version of an Irish Cream but instead of whiskey, we use rum. I didn’t “elevate” this recipe anymore because I love the simplicity of its ingredients and it is delicious! Give it a try and let me know what you think! Ingredients: * 2 oz freshly brewed coffee, cooled to room temp (or cold brew) * 3/4 oz condensed milk * 2 oz Rum Alternative (I used @seirhill ’s limited edition rum featuring @onthemocks ) * @milophilippines Chocolate Malt Powder for garnish Instructions: 1. Mix coffee and condensed milk in a short tumbler. 2. Add ice. 3. Add rum alternative then mix well. 4. Dust off with Milo (chocolate malt powder) for garnish.
