A summer trip to Hawaii, but make it a meal in Singapore 👀

Butcher’s Block has launched its Summer IMUA menu, available till 31 August, bringing vibrant seasonal produce and Hawaii-inspired flavours to both the à la carte and tasting menus.

My favourite was the Lomi Lomi Kombu Cured Bluefin Tuna from the tasting menu. It comes with beet-cured bluefin tuna, smoked kanpachi, tomato sorbet, marigold oil and tomato water — refreshing, smoky, sweet and tangy all at once.

The Grilled WA Marron pays homage to the chef’s childhood memories of catching crayfish in Hawaii’s freshwater mountain streams, now elevated with marron grilled over coals.

A returning favourite is the Huli-Huli Dry-Aged Duck, served with smoked plum purée. If you’re ordering à la carte, you can get it half or whole.

And to end, the Calamansi Kakigori brings together longan ice cream, osmanthus “noodles”, caramelised ginger pudding and calamansi shaved ice.

A summer menu that feels bright, playful and made for a little escape without leaving Singapore.

Would you go for the bluefin tuna, marron or dry-aged duck first?

Each visit to Butcher’s Block offers a different perspective on Chef Jordan Keao’s cooking, with every seasonal menu showcasing a fresh selection of ingredients and ideas. This time, I was back to try some of the highlights from the new Summer IMUA tasting menu, alongside a selection of signature à la carte dishes.
•
The evening began with two opening bites. The Summer Squash and Zucchini Tartlet paired smoked burrata with the freshness of seasonal squash, while the Fire Grilled Razor Clams carried a light smokiness from the grill, finished with smoked trout roe that added a gentle briny richness.

One of the courses I enjoyed was the Lomi Lomi Kombu Cured Big Eye Ahi. The combination of beet cured tuna and smoked kanpachi was complemented by tomato sorbet, tomato water and marigold oil. Rather than competing with one another, each element played its part, with the tomato bringing freshness while the smoked fish added depth, creating a dish that felt balanced from start to finish.

The Grilled WA Marron was equally memorable. Cooked in its shell over charcoal, the marron retained its natural sweetness and delicate texture, while the caramelised parsnip purée added warmth and earthiness. The crème fraîche brought a creamy richness, with the makrut lime providing just enough citrus to lift the dish without overshadowing the marron.

We were also served several signature dishes from the à la carte menu. The Huli Huli Dry Aged Duck was a standout, with beautifully rendered skin from the repeated glazing over the fire. The breast remained tender while the leg offered a dee

We can’t believe it’s been two months since we popped up at @newbahru

It’s been so much fun stepping out of our home in ECP, meeting new friends, and making pasta in the city. We’ve still got a while left, so if you haven’t had the chance, come by and say ciao!

By the way, we also made room for dessert.
Fico’s tiramisu is in town 🙌
