Sometimes you have just to look at your ride to understand how many miles you did...
I would never thought that hospitality was going to be my life time career...
from the first espressos done at my family business spot...what a ride and what a rollercoaster route till here...living my own American dream in a f*****g bad period...probably the worst of this century..
I’m still trying to keep going all the good possible and off course to support my two girls...said this sometime when you take a look backwards (I’m mostly looking forwards) you have to be fair and grateful to all the people who helps you to be where you are...
so today I’m happy to say that starting from my dad , passing through all my mentors and eventually bar/ hospitality heroes just to mention a few @kingcocktl #davidwondrich my brothers @ferasaman @hey__fabio @simonecaporale_ and many others I want to say thank GRAZIE to you to all my bartenders good fellas and the time they spent to help me with papers (actually they are still helping ) I want to say thank you to the guys @vina_enoteca who first brought me to the stars and stripes country..it has been a long ride and now to my fantastic duo bosses @ayesha_kj_thapar and @chefsri_g who are working hard to make ETTAN the place to be in Palo Alto🎢🎡🎈Grazie I think the best is yet to come even with the pandemic and all the restrictions because mostly is about the mistermind chef but my drinks are not that bad 🤣🤣🤣
grazie to all the guests (some cocktails nerds too)that in this almost four years have had one of my drinks in their hands or they will have...
Much love to all of you ♥️

NEIGHBOURHOOD FORAGING NEW ZEALAND.
.
THE COCKTAIL.
.
Physalis is genus of plants in the nightshade family (Solanaceae), and is therefore related to the tomato, tomatillo, tamarillo and ground cherry.
.
In this case we fermented the gooseberries with a lactic fermentation using a kefir starter.
With the kefir starter we get more of yeasty, brioche taste that is absolutely amazing.
.
CEDRATA.

kiwi wine.
.
Gooseberry.
.
Important; be careful and remember, if you are in doubt, do not pick the plant.
More importantly respect nature and others.
