Thank you @jillsilvafood for writing in @kansascitymagazine about @bbqtourist & I’s work on @thesmokesheet and our upcoming book out in May.

We had the pleasure to speak with Jill a few months back while visiting some of our favorite spots in KC including @jackstackbbq, @arthurbryantskc, @museumofbbq, @meatmitch, & @slapsbbq for book research. Links to read her amazing story & to pre-order the book in bio.

350 contests, one family restaurant, and now Joe Pearce is cooking for $1,000,000. 🔥

Joe grew up in a trailer park in Kansas City and asked to cook the chicken for his own eighth birthday. He burned every piece.

Years later he and his big brother Mike each bought a smoker without telling the other. Their second contest ever, they got a call. Then came BBQ Pitmasters, a winner-take-all finale in Tampa, and a loss that left them with a hat and a new name: Slap's.

That same summer the brothers and their mom Francine opened Slap's BBQ in Kansas City, Kansas, on maxed credit cards. More than 350 contests later, Joe is team No. 31 in the BBQ World Cup field.

Swipe for the whole story. Who in your family taught you how to cook?

Kansas City: The Epic BBQ Trail

Recently, I checked off the BBQ mecca that is Kansas City off my lifelong travel bucketlist, and I gotta say that this destination overdelivered big time! Instead of doing 4 separate posts, I figure it would be easier to discuss it all in one shot right here, RIGHT NOW!

@slapsbbq: This was technically the moment I crossed state lines into Kansas and can officially say I hit my 34th state, so right off the bat this was memorable for that reason. This platter was excellent with the burnt ends and potato casserole stealing the show in particular!

@joeskc: The final boss of KC bbq. The boss that appears after you think you beat the game. If you don't conquer Joe's, can one even say you did KC bbq? This was phenomenal overall, with the burnt ends, ribs, mac and fries being the big time stand outs.

@chefjbbqkc: The one that I'd say is under the radar but more people NEED to know about because this was the best OVERALL platter of BBQ I've ever had, and coming from me, that should hold WEIGHT. The brisket was the best of my life, the ribs were the best of this trip, the bacon burnt ends were impeccable, and the cheesy elote corn and bacon & blue potato salad were simply stunning.

@arthurbryantskc: A KC institution I had to check out while I was here. God damn was that potato casserole banging.

If I could make a perfect KC bbq platter, I would take the brisket, ribs and cheesy elote from Chef J's, the burnt ends and potato casserole from Slap's, and the mac & fries (and more burnt ends) from Joe's. SO DAMN GEWDDDDDD.

I STAND BY IT: some of the best tacos in Kansas City are at a BBQ joint. 🌮🔥

Hear me out…

I LOVE an authentic street taco. Give me the carne asada, al pastor, birria, deep-fried tacos—all of it. And living in KCK, aka the Taco Capital of the United States, we are definitely not hurting for incredible tacos.

But what if we think outside the tortilla for #NationalTacoDay? 👀

Because only in Kansas City does it make perfect sense for one of our BBQ spots to turn BURNT ENDS into tacos.

Every Tuesday, @slapsbbq in KCK serves their Burnt End Street Tacos—and y’all, these are one of my FAVORITES. Deep-fried burnt ends, sautéed peppers + onions, fresh cilantro and that Slap’s taco sauce. 🤤

10/10. No notes.

And the funniest part? Every time I tell someone about these, they’re shocked that Slap’s even has tacos! They’re actually one of their most popular daily specials, but you can ONLY get them on Tuesdays.

So if you needed a sign to go get them… THIS IS IT.
They’re available today until sold out!

And if burnt end tacos aren’t your thing? You’re already in KCK—there are plenty of incredible spots nearby ready to fuel those National Taco Day cravings. 🌮

But me? I’m getting the burnt ends. 🔥

Sampling what a lot of people around here believe to be the best #barbecue. I have to agree it’s pretty damn good.
this place is definitely worth your time. Great screened in porch for seating as well as a rooftop patio. Great bbq vibe. the crowd at opening time was light, but I’ve heard it gets pretty packed at times

i’m in KC for judging the American Royal #BBQ competition & visiting some barbecue places that are new since I lived here 25 years ago.
