My totally legal elevated take on a Painkiller. I think I nailed it.

It’s rummy, it’s juicy, and it’s deeeeep. The Demerara + Potstill Jamaica combo it’s you hard and soft as the beat line. Burnt sugar, banana, dried apricot, vanilla, and spice. The pineapple and orange juice help leaven the rums with a bright tropical smoothie groove and are part of the essential makeup of making something taste like a PK. Then the coconut adds this nutty creamy bass that marries the rum and the juices.

I liked using the acidulated OJ, it balances the drink without adding in the electricity of lime. I also recommend using @garretjrichard Coconut Mix concept. It plugs in the coconutty flavor but less artificial and less saccharine than straight cream of coconut. And the freshly ground nutmeg is essential, ups the baking spice notes from the rum and starts baking a cake with the coconut mix.

1.5oz/45ml Hamilton 86 Demerara Rum

.5oz/15ml Smith & Cross Traditional Jamaica Rum

1oz/30ml Fresh pineapple juice

.75oz/22.5ml Fresh orange juice, acid adjusted to lime

.75oz/22.5ml Coconut Mix (1:1)

Combine all ingredients in a shaking tin. Add 4 small ice cubes and quick shake (~7-10 secs). Open pour into a chilled brandy snifter. Top with crushed ice. Garnish with freshly grated nutmeg.

This is actually my second time making this drink because the first didn’t quite hit the spot. I’ve split the 1.5oz “black blended rum” measure to give the crème de Banane a fighting chance. Originally I used 1.5oz Worthy Park 109 (in place of Coruba, which I suspect to be the original rum Cate used) which is just a bit too powerful and overshadows the liqueur. Don’t get me wrong, it’s one of my favorite cocktail rums, especially in the Doctor Funk and Jungle Bird. Works betters in most tiki drinks than Coruba, imo.

And now it’s really good. It’s super funky and rich. Oaky but very rummy and spiced as all get out. The banana plays up these notes instead of being at the center of the cocktail. The cinnamon and rum barrel take over the top of my palate with a sorta Yuletide Rum Toddy kinda deal but the lemon, crème, and rum congeners make up the base which make is super fruity and tropical.

.75oz/22.5ml Worthy Park 109 Jamaica Rum

.75oz/22.5ml Hamilton 86 Demerara Rum

.5oz/15ml Smith & Cross Traditional Jamaica Rum

.5oz/15ml Giffard Crème de Banane du Bresil

.33oz/10ml Cassia Cinnamon Syrup (2:1)

.5oz/15ml Fresh lemon juice

1 dash Angostura Bitters

Combine all ingredients in a shaking tin. Whip shake with a lil bit of pebble ice. Open pour into a chilled rocks glass. Top with more crushed ice. Garnish with a cherry and/or a parasol.

Spontaneous overnight trip to Ft.Myers. Figured it was a perfect opportunity check out Jungle Bird in Cape Coral. Enjoyed many of their drinks: Mai Tai, Fighter Pilot, Banana Hammock, Barreled Rum Blend, and the Cat 5 Hurricane. Greats appetizers such as Crispy Brussels Sprouts, Hoisin Glazed Sticky Ribs and and we ended up sharing the Huli Huli chicken entree.

After we enjoyed some Wicked Dolphin Rum cocktails at our hotel rooftop bar, and I had a pour of Smith & Cross.

The Last Pour 🥃

Das Bild schließt direkt an Diary of an Alcoholic an.

This drink unabashedly rules. Compared to other cocktails I’ve tried that use crème de Banane, this one is the most bananas. Worry not, you still get rich, oaky bourbon and the ripe fruited punch of Smith & Cross, but those flavors play up the banana bread flavors. Overripe and cooked banana, caramel, cinnamon, vanilla, and clove. The lemon adds a touch of sunshine that keeps this boozy boi from being too much.

1.5oz/45ml Old Grand Dad BiB Bourbon Whiskey

.5oz/15ml Smith & Cross Traditional Jamaica Rum

.5oz/15ml Giffard Crème de Banane du Brésil

3 dash Angostura Bitters

Combine the ingredients in a mixing glass and fill with ice. Stir until chilled and diluted (~30 seconds depending on your ice). Strain over ice into a chilled rocks glass. Express a lemon peel and tuck it in.
