That’s a wrap. What a year it has been. I changed my fair share of nappies and SD cards this year. And somehow in between all of that I managed to shoot some of my favourite photos of my career.

Thanks to all the amazing people that I got to work with this year. You are all bloody legends.

We recently visited Deborah Allard’s Cheese Farm @debra_allard_cheesie with Chef Barret to see where the magic happens and how Deborah crafts the incredible cheeses we use at Beach.

Up before sunrise, we watched the friendly Jersey cows amble across the paddocks and saw the milking process in action. These cows are calm, happy, and cared for with so much love – it was impossible not to make a few furry friends along the way.

From the morning milking to your plate at Beach, every ingredient has a story. Take the stracchino paired with pistachio cream, slow-roasted beetroot, and fresh greens – a fresh, vegetarian starter that’s already won hearts.

We recently visited Abel and Andrew from @shroombrothers_ with Chef Barret to explore the magic behind the incredible organic mushrooms we use at Beach Byron Bay.

Grown right here in Stokers Siding on locally sourced sawdust, these mushrooms are truly something special in a market where most are imported.

At Beach, we showcase their beautiful lion’s mane mushrooms in a dish that’s all about depth and texture. They’re steamed for an hour and a half, pressed overnight, marinated with natural juices and a blend of over 50 ingredients, then grilled to perfection. The result is served with whipped goat’s cheese, fennel, rocket, and local macadamia - a true celebration of Northern Rivers produce.

We’ve recently taken on Shelter and their accomodation @cupola with all things social media including management, content creation and paid ads.
