Steeped in history and surrounded by timeless beauty and vineyards of heritage grapes 🍇 , this remarkable estate was the perfect setting to blend Portuguese elegance with the infectious energy of a Spanish fiesta—featuring authentic paella and hand-cut Jamón de Jabugo.

Creating beautiful events through food 🥘 is my greatest passion, ❤️ and seeing guests come together 💃 over incredible flavours 🍇🥑🥒🫚🍳is why I love what I do. 👏🏻

☀️ A beautiful day at @da_granja with my dear friend @mariabeneditars and @adrianaabascal, celebrating the first batch of extra virgin olive oil from Maria’s own olive trees and Adriana’s new @maisonskorpios boots

While travelling through the Alentejo, I stopped at @quintalinda_ to pick up organic vegetables for our lunch.

For the past few years, Maria has been bringing her ancient olive trees back to life, carefully restoring the land and trees to produce high-quality extra virgin olive oil. She showed us the traditional production process and shared the story behind the first harvest.

Under the olive trees, we created a dish inspired by my years in Tuscany and the classic Panzanella, reimagined with pão alentejano prepared like an Açorda and finished with Maria Benedita’s beautiful olive oil. As we cooked, tasted, and laughed, we searched for the perfect name. Then it came to us: Açordela 🍅

Sometimes the best recipes are simply stories shared around a table.

In a few days, we begin the Qi Natural Permaculture Design Course — 80 hours over five weekends.

There is much talk of autonomy.
But sovereignty begins somewhere simple: in knowing how to care for the land that sustains us.
Learning to grow some of our own food is not a step backwards.
It is a step towards clarity.
Understanding the soil.
Reading natural patterns.
Designing systems that work with a place — rather than against it.

In uncertain times, producing food with awareness is a quiet form of responsibility.
