It’s like a salad.. on bread! Organic Bread Alone Sourdough to be exact 🤤 Mixed baby lettuces, shredded carrot + ruby red beets, freshly sliced tomato + cucumber, local kimchi + sauerkraut, and tarragon mayo make for a colorful way to indulge today. You can have it your way and add avocado, grilled chicken or even bacon! Any way you choose to do it, this baby will always be organic, and always be available vegan + gluten-free!

Sundays are for stewing! Especially today.. here in southwest Connecticut it's a wet, grey day. Perfect for slow cooking something and reading a book while you wait 🥰

I knew I wanted rice: I spent a good majority of my morning scrolling on the #theartofplating for some inspiration and everything rice-y was calling to me. It's such a comfort food!

Since I hadn't yet found a way to use my tomatillos or corn from last week's farmer's market haul, I figured there's no better day. Stewed tomatillos and white rice for the win!

I parboiled the tomatillos until tender, then let them cool a bit. I thinly sliced one yellow pepper and a small red onion, searing them on high heat until a bit charred. I added fresh corn kernels, cut off the cob and allowed them to get some color. I then lowered the heat, added two large cloves of garlic, thyme, curry powder, ancho chile, a pinch of brown sugar and smoked paprika. And pink salt! I poured in a couple tablespoons of coconut milk to bring everything together, let it reduce until evaporated, then made a clearing in the center of the skillet and added a bit of olive oil and the tomatillos. I let them sear, then flipped them, added about eight ounces of coconut milk, and then let them simmer on low until thick and rich.

The rice I made simply- toasted basmati with lemon zest, splash of olive oil, five-finger pinch of salt.

I had set a bit of the fresh corn aside, which I added a bit of diced red onion and a handful of chopped cilantro and parsley to to garnish. I'm a huge texture/temperature contrast kind of eater, so the cool crunch against the roasty, creaminess really pops and lets you appreciate the versatility of the veg.

I'm not a big tomatillo person, but my little homie Natalia quick-stewed some of her own market tomatoes with basil earlier in the week and it totally inspired me to do the same with mine.

Inspiration is everywhere! One of the joys of cooking is being able to create your own masterpiece, while being influenced with as many dishes, tastes, cultures and ideas as you wish. Food is art. Sharing it is truly a gift.
