This weekend’s wedding @spring_ldn All from the garden - asters, dahlia, chrysanthemum, tobacco flower, grasses and vines. And the tiniest autumn cyclamen.

A dessert at Spring is as much about the details as it is about the ingredients. Here, Culinary Pastry Director Giovanni brings a dish together with precision, balance and a close attention to seasonality - letting the produce take centre stage.

food review #184 @spring_ldn 20.10.26 I’ve been to @spring_ldn a few times now. it’s a beautiful restaurant. and their scratch menu is the best of it. the opportunity to dine at a restaurant this gorgeous, and eat food this inventive and well-executed, for a fraction of the price, is a true blessing. not to mention the premise of the menu is to champion otherwise wasted produce. how could you not love it! there is no set menu to refer to when you book, so not a spot for the picky eaters. but for the adventurous ones, you’ll have a blast! this menu had me trying produce I’d never had before. we started with an amuse bouche, a perfectly crisp and decadent charcuterie trim croquette. a proper melt in the mouth few bites. then, an outer leaf salad. the olive oil atop truly made these leaves shine, and the hunks of cheese too! the fish trim curry was warm and comforting with a mild coconut curry sauce. the fried leek tops are my new favourite thing: like crispy onions, but better! saving the best til last, that dessert was just to die for. the bitter chocolate was molten and just bursting with flavour. it almost tasted like a dulce de lèche! a gorgeous atmosphere and a great cause. the scratch menu at @spring_ldn is my cup of ☕️! #londoneats #londonfoodguide #londonrestaurants #foodwaste

Join us at Spring for our next Shared Table, as we welcome Merlin Labron-Johnson of Michelin-starred Osip in Somerset for a special autumn gathering on Saturday 31 October. With a shared appreciation for the rhythms of nature and the abundance of the seasons, Merlin’s thoughtful approach to cooking draws inspiration from the surrounding landscape, with ingredients grown on his own biodynamic farm. For this edition of our Shared Table series, we invite guests to enjoy the experience at their own pace, with tables available to reserve at Spring between 12pm and 2pm. A thoughtfully curated four-course menu will celebrate the connection between land and plate, bringing together Merlin’s distinctive approach to seasonal cooking and a philosophy that sits close to the heart of Skye’s own. The experience is £95 per person, including a welcome drink, with reservations now open via our website.

A day @spring_ldn kitchens is an immersive experience, surrounded by the finest of ingredients, sourced from the best suppliers. This was a 🦀 salad of piquant beauty & included fennel; endive; apple; a Verjus dressing & a scattering of petals & springs of chervil from @fernverrow @heckfieldhomefarm. Watching its construction (“Skye always wanted height on the plate”) & being encouraged to have a go, is always a joyful task. Now to try it at home … Swipe to see some of the other culinary works of art, all tasting as good as they look, served in the marble, sunlit interior of the New Wing at Somerset House. Often with a 🥂 @coatesandseely. #coatesandseely #springrestaurantlondon

It was a dream moment. Walking in the woods with Head arborist @dgaturner & a bartender. Discussing the flavour of trees. Selecting four species from a 19th century arboretum for a very special edition with @heckfield_place Sylva Sugi Japanese cedar (sugi) giant redwood native silver birch veteran sweet chestnut Over 18 months, fallen branches from the estate were roasted, blended with distilled einkorn wheat and aged at our maturation lab. Cool and resinous on the nose, warm and biscuity on the palate with a long, dry finish. yum. A woodland, captured in a bottle. Now served at Heckfield Place and @spring_ldn at Somerset House.
