➡️ WE ASKED A FOUNDER: Tell us about a big operational decision you made.

Tory Burch Fellow, pastry chef and founder of @squishmarsh Katherine Sprung shared the story of making the difficult decision to close her New York City storefront after five years.

“Coming out of the pandemic, my biggest revenue streams were those were the ones with the best margins. Corporate gifting, special events, brand partnerships, and catering–all operationally streamlined and sustainable. And they could all easily operate without a storefront (which equals a lot of overhead).”

For two-and-a-half years, she sold her creative marshmallows through Etsy, pop-up shops, local markets and wholesale. But she knew that to truly grow, she would need to have a store. “I don’t know if you’ve heard,” she joked, “but operating a commercial space in New York City isn’t cheap!”

“I don’t regret opening a store, and I don’t regret closing it. It’s all been a part of the process! I had to think about what I saw the future of the business being. A lot of people and customers were really sad about the closure, but I wasn’t. The company wasn’t shutting down, it was just going to operate in a different way, one that made more sense for the business and myself. I’m proud of the fact that I had a shop for five years in New York. It came with lots of great moments and opportunities, but knowing when to pivot and do what’s in the best interest of the business is more important.”

Thank you for sharing your story, Katherine—and reminding us that making bold decisions (and learning from them) is part of the process. #ToryBurchFellows
