Doing some R&D on different dough and seasonings for the sauce.
Pop up going down Oct 12th!!!
So far I’m thinking def Marg and a Pepperoni, a breakfast pie because this thing is doing I’d first thing in the AM, and maybe like a marinara or a white. Keeping number 1 stupid simple

Still working on a few things, and I gotta get a couple more things together but I’m just about there

THE DOUGH!
The reason I picked this specific intensive at Pizza University was to establish strong, adaptable roots in all the factors that go into a dough, the science behind it, the why, so I could truly understand the decisions I make when I’m creating my dough. And DAMN DID I LEARN!!

I have a poolish out on the counter right now to make dough for a project tomorrow and then when I get home from Sacramento next weekend, it’s time to start playing even more!! Wafu Italian desires continue to grow bigger and bigger. Let’s party 🍕
