🍽️ Studio Supper

Tonight we’re making Egyptian hamburger kofta pita pockets with homemade tahini and arugula.

Kofta (Egyptian hamburgers):
Mix 5 lbs ground beef (80/20) with 1 cup breadcrumbs, 1–1½ bunches finely chopped parsley, 1½ large minced onions, 5 cloves garlic, salt + pepper. Let sit 30–60 minutes, then form large patties (about 5 inches wide, ½ inch thick). Grill on low to medium heat until fully cooked.

Since I made this for ☝🏼, I used 1lb ground beef, 1 large onion and half a bunch of parsley. No bread crumbs, so sue me. These freeze super well, so I made two and saved the rest for a ☔️ day.

Tahini:
Whisk together ⅓ cup tahini + ⅓ cup water, juice of 1 lime, 1 tsp salt, 1 tsp cumin, 1 tsp white vinegar, 2 cloves garlic. Taste and adjust until it’s smooth and balanced.

Assemble:
Warm pita + kofta + generous tahini + handful of arugula. 🌱
