Time to get real about the numbers. Both hindquarters of this medium-sized cow elk have been aged for 12 days, and I'm extremely particular about the meat I cut. Every piece must be clean and ready to cook, with no silver skin, fat, or questionable meat left behind.
So, what's the yield from the hindquarters? About 55 lbs, with approximately 23 lbs of waste.
When you add in the backstraps, loose meat, and front quarters, the total yield comes out to 80-100 lbs of flawlessly cut and ground meat.

Bear is hands-down delicious, and one of my go-tos.
With my background in biology, butchery, and hunting to feed my family, I insist on cooking bear to 161;
this ensures safety, even with sous vide.
Some may have differing opinions, but I prioritize caution.
That being said, if you've had your bear tested and confirmed parasite-free, I'm all for enjoying it rare!

Most my podcasts are primarily about hunting but I love getting to talk about my businesses, because besides my marriage and raising two amazing children I consider them my biggest accomplishments in life. Thank you @elkshape for having me on. As always, you are an amazing host and I love getting to catch up with you! The full podcast is on his Elk Shape Podcast YouTube. We talk about my bad ass husband, family life, business and of course hunting.
