Should we judge a sake by the company it keeps?

In this Sake Master Session, @boynamedshu and @junmai_gaijinjo discuss North American vs Japanese sake from a brewer’s perspective.

One of the best moments in this business is realizing someone didn’t just try your sake once. They came back for it, they ordered it again, and they made it part of their routine.

In this Sake Master Session, @boynamedshu and @junmai_gaijinjo discuss North American vs Japanese sake from a brewer’s perspective.

One of the worst-kept secrets in sake is that enzyme preparations and other legally defined additions exist because brewers have to deal with the reality of fermentation, not just idealized theory.

In this Sake Master Session, @boynamedshu and @junmai_gaijinjo discuss North American vs Japanese sake from a brewer’s perspective.

There’s a particular kind of American confidence that shows up in sake brewing. Sometimes it leads to innovation. Sometimes it leads to someone proudly saying, “Here’s my bodaimoto.”

In this Sake Master Session, @boynamedshu and @junmai_gaijinjo discuss North American vs Japanese sake from a brewer’s perspective.

One of the biggest knowledge gaps in North American sake is what decisions get made between building the fermentation and deciding it’s time to press.

In this Sake Master Session, @boynamedshu and @junmai_gaijinjo discuss North American vs Japanese sake from a brewer’s perspective.

One of the biggest disconnects is that the sake available in North America is not fully representative of what Japan drinks, so we often start from a skewed idea of what sake even is.

Mark your sticker-collaged calendars: the first annual Northwest Stationery Fest is coming to Portland this fall! Meet fellow paper crafters, practice a new skill in creator-led workshops, and browse a curated marketplace of both functional and decorative goods.

This year’s fest will be taking place November 7th + 8th at Olympic Mills Commerce Center (next to our friends at @sunflowersake !)

Vendor applications are open through May 14th at the link in our bio. We’re specifically looking to highlight artists that make sticker sheets, washi tapes, writing materials, paper craft tools, and the like.

All ages and abilities are welcome, and the venue is mobility device accessible. Stay tuned in the coming months for more details. We hope to see you there!
