HUGE shout out to @sunriseflourmill as I just made one of the best batches of artisan NYC bagels right here at 7300’ in Boulder Colorado. Started with a Poolish from Eldorado Springs water yeast and @sunriseflourmill then turned it into a dozen amazing bagels. I think I just found my flour!!!!!!

𝑴𝒂𝒌𝒊𝒏𝒈 𝒔𝒐𝒖𝒓𝒅𝒐𝒖𝒈𝒉 𝒃𝒓𝒆𝒂𝒅 & 𝒃𝒂𝒈𝒆𝒍𝒔 for my family with flour grown without glyphosate. 🍞🥯

24 hours of work in 60 seconds! When putting this much time and love into homemade sourdough, I am intentional about all my ingredients.

I chose @sunriseflourmill because its wheat is grown without glyphosate, and they share third-party testing information.

We use organic honey, filtered water, and @diamondcrystalsalt , which I chose after looking into its lead-testing information.

𝑩𝒖𝒕 𝒘𝒉𝒚 𝒔𝒐𝒖𝒓𝒅𝒐𝒖𝒈𝒉? 👇🏼

Traditional sourdough uses wild yeast and beneficial bacteria to ferment the dough. This process can:

🌾 𝑰𝒎𝒑𝒓𝒐𝒗𝒆 𝒏𝒖𝒕𝒓𝒊𝒆𝒏𝒕 𝒂𝒗𝒂𝒊𝒍𝒂𝒃𝒊𝒍𝒊𝒕𝒚: Fermentation can break down phytates, which bind minerals like iron and zinc, potentially making more of those nutrients available for absorption.

🥖 𝑺𝒖𝒑𝒑𝒐𝒓𝒕 𝒅𝒊𝒈𝒆𝒔𝒕𝒊𝒐𝒏: Fermentation breaks down some components of the dough, and some people find traditionally fermented sourdough easier to digest.

🦠 𝑨𝒇𝒇𝒆𝒄𝒕 𝒔𝒕𝒂𝒓𝒄𝒉 𝒅𝒊𝒈𝒆𝒔𝒕𝒊𝒐𝒏: The acids produced during fermentation can affect starch digestion, although blood sugar responses vary depending on the bread and the person.

𝑨𝒏𝒅 𝒘𝒉𝒚 𝒅𝒐 𝒘𝒆 𝒇𝒓𝒆𝒆𝒛𝒆 𝒐𝒖𝒓 𝒃𝒓𝒆𝒂𝒅 & 𝒃𝒂𝒈𝒆𝒍𝒔? ❄️

Once cooled, we of course enjoy some! Then, slice and freeze the rest. Freezing helps preserve freshness and extends storage time.

Another interesting benefit: as bread cools, some of its starch can reorganize into 𝒓𝒆𝒔𝒊𝒔𝒕𝒂𝒏𝒕 𝒔𝒕𝒂𝒓𝒄𝒉. Cooling, freezing, and thawing may encourage this process. Resistant starch resists digestion in the small intestine and can be fermented by gut bacteria in the colon. It may also help reduce the blood sugar response, although the effect varies.

We store ours in freezer bags from @fiveoaksfarm!

I’d love to mill my own flour someday, but for now, I’m making more informed choices one step at a time. The good things are worth the wait, especially when they’re for the people dearest to my heart. ❤️

Have you started your sourdough journey yet? 🌺

Miciah loves a good muffin before school in the morning. I took some bananas and flour from @sunriseflourmill this evening and put together something she says is “pretty good.” I need a little more practice before this becomes a published recipe.

Pumpkin gnocchi for dinner! This is not sponsored in any way but I'm so excited because I can eat the flour from Sunrise Flour Mill and it doesn't seem to make my gluten sensitivity act up!

Ginger Bundt Cake with Apple Cider Caramel 🍂 The first time I made this, my family commented on how good it was for a solid week. It’s become a staple this season! ** my personal favorite part is the caramel 😍

Ginger can be a little bitey on its own, but baked into this cake with fresh apple, it softens into a sweet, dense, and comforting treat. And then of course, we drench it in a perfectly balanced apple cider caramel. Because why not? 🧡

The full recipe for the cake and the caramel are on Substack 🤍🍮

Good bread begins with thoughtfully chosen ingredients. 🌾

I seek out organic flour because how our wheat is grown matters. Certified organic farming prohibits glyphosate and emphasizes healthy soil—practices I value when choosing ingredients for The Crumb Collective..and ultimately what ends up on your table and in your body.

Because in a world with so many questions about what is really in our food-this shouldn’t be one of them.

Rooted in tradition. Elevated with intention.

Our Classic Sourdough is exactly what you would expect when wanting a chewy bread with a hint of tang and a crusty exterior. Perfect for toast and jam, grilled cheeses, or BLTs.

Our loaves are made using @sunriseflourmill 's heritage flours, which are known for being glyphosate free, nutrient dense, and easier to digest due to their farming and milling practices. We want our customers to have access to the same healthy bread that we make for ourselves.

Our bread would not be possible if it wasn't for the hard work of our starter, Doughlores. She is a little kneady, but always rises to the challenge.

Website is in our bio. ♡
