🤎 #sauerteig #sourdough #sourdoughninjas #sourdoughbread #madebyesi

And here’s the crumb… 🥹🥖🤎 This was my true autolyse + bassinage test and I’m really happy with how it turned out. The dough felt much stronger and the crumb turned out soft, airy and with some beautiful open pockets. 😍 Thank you @mirela.out for sharing your tips with me about true autolyse and the order of adding the ingredients. I definitely learned something new! 🤎🥖 And of course I had to try this scoring pattern inspired by my sourdough ninja @theboganbakery 🥷🥖🤎 I also love how this scoring pattern helped the loaf open up so beautifully and gave it such a nice round shape 😍🥖🤎 #sauerteig#sourdough#autolyse#sourdoughninjas #madebyesi

🥷🍞 Ninja Bread production has landed —and yes, I’m completely serious about this ridiculous little loaf. 😂 No tutorial, no life-changing baking wisdom, just me turning bread into a ninja and laughing far too much at the result. Funny enough, I last baked a loaf like this back in August, when I was in Poland. Little did I know we’d end up calling it Ninja Bread! But now it makes perfect sense. 😂 But now my husband and my friends want ONLY Ninja Bread. To be fair, I can see why. Beautiful bloomed shape somwhow makes it easier to slice! I’ve actually been feeling a bit low lately. Missing my family back in Poland, home, and all those little things you don’t realise you miss until you’re far away. Some days it just hits a little harder than others. And somehow, this ridiculous Ninja Bread cheered me up. ❤️ Not every reel needs to be educational, inspirational or perfectly polished with perfect bread . Remember when Instagram used to be fun? When we could just post something because it made us laugh or something that we liked without a stress of stats and %. Well, here’s my contribution to bringing a little of that back. 😂 Thank you @theboganbakery for the inspiration and a much-needed giggle! And a special thank you to my hubby for his fantastic knife action. Hollywood, may be calling 🔪😂 Although, on that note, I STILL need a decent bread knife. Recommendations welcome! 😂 Now tell me, have we completely lost the plot, or should Ninja Bread become a thing? 🥷🍞 #sourdough #sourdoughbread #breadbaking #homebaker #ninjabread bakingfun sourdoughcommunity

____________ Halloween Idea No. 2: Sourdough bread with Khorasan flour and lactose-free skyr – topped with a little sesame ghost. I got the idea of using Khorasan from a baker I follow on Instagram @theboganbakery . I’ve seen her use it in her breads quite a few times, so I wanted to give it a try. This time I used 75 g Khorasan flour in 500 g total flour – exactly 15%. I also added 100 g lactose-free skyr for some extra protein and used a little less water than usual. I’ve been wanting to try the little ghost for a while too, after seeing so many creative sesame ideas from another baker (@angelamgarr) I follow. The tricky part? Patience. You don’t really know if the ghost worked until the next morning, when the bread comes out of the banneton. I’m really happy with the idea, the crumb and, most importantly, the flavour. This was just so much fun to make. Which Halloween idea should I try next?

🍩 Sourdough Donuts 🍩 These same day sourdough donuts were so easy to put together and came out so tasty.. I actually rolled half the dough out flat and cut flat disks for the plain ones and then shaped some in rounds let them become puffy before a quick fry and rolled in cinnamon sugar ✨ I have @theboganbakery to thank for this beautiful recipe that I will definitely be making again soon 💕 #sourdough #samedaysourdough #sourdoughdonuts #donuts #jamdonuts
