If your confused by this reel….let’s just say a certified “baking expert” 👀 let me know a bad baker puts flour on dough 😂 and that I can get in trouble for rice flour and any serious baker would throw me onto the streets and I just crack up now whenever I put rice flour on my sourdough 🤣🤣🥷

Apparently my rice flour has brought the baking police and I’m about to be thrown onto the streets hahaha 😂

At first I honestly thought old mate assumed I was putting bread flour on top, so I explained it was rice flour, it’s common practice with sourdough and that I just personally love the beautiful contrast it leaves on the crust.

Well fuck me, apparently that was my confession 😂 Next minute I’m ignorant, I’m going to get into trouble and a serious baker would immediately throw me out onto the street. Anyone would swear I was running a drug operation, I’m just dusting a loaf in my kitchen for my family mate 😭🤣

The ego in baking sometimes is at times something else, we’ve got different cultures, traditions, flours, techniques and people making beautiful food in all sorts of ways, yet someone likes a different finish on their crust and suddenly we need a royal commission. 👀😂

Your experience can teach you a lot without being the only way everyone else is allowed to do things. Share your knowledge, explain your preferences, but geezus, liking a bit of contrast doesn’t require rehabilitation 😂

How about we all focus on what we’re baking ourselves lol 😂 maybe mind our own business and let people enjoy creating something for themselves 👀😂….it’s food, it gets eaten and shat into a toilet afterwards, it’s really not that deep 🤣🤎 if it taste good whom cares and I mean if your not even eating it why it bother you. People be just angry for nothing these days 😂😂🤣

Ps I gonna put extra rice flour on now just for you boo please seek some therapy to maybe I would hate to see how you handle life if my rice flour annoys you 😂😂😂😂

I’ve spent the past few days attempting a voiceover for this reel, but apparently I can bake in German better then I can speak in English 😂🤣 I write like a genius, then open my mouth and it is like my brain and mouth aren’t on speaking terms 🤣😅

This is Caroline’s from @cultured.folk Mohnstriezel recipe, a German poppy seed swirl, which I’ve been confidently calling “Mohnkucken” in my stories… went back to check her recipe and realised it’s not even Mohnkuchen, that’s a different one altogether. Somewhere between Google and my mouth I’d made up my own German word for another similar dessert sorry😅 😂❤️ I’ve been loving learning so much about the beautiful German culture, so many beautiful bakes I’ve never heard of in my life to experience and try. 😍

There’s a lovely little friendship behind this bake too 🥰 Caroline from Cultured Folk is a beautiful German mum and baker based here in Australia, and such a wonderful friendship has blossomed between us. We get along so well, I’ve been helping her with sourdough and she’s been helping me with German baking, although clearly I need a few extra lessons on the names 😂❤️

It’s pretty special finding someone who shares that same love for baking and food, who you can learn from and share what you know with too. I can’t wait to try more of her recipes 🥰

So here’s the reel, without me arguing with my own tongue. I’ll hopefully have Caroline’s recipe linked at the bottom, once I work out how to do that too… 🤣😅

I will be sharing this to my story with the link to the recipe on Caroline’s page as I know how to do that hehehe.🤣

73% hydration back for my 20% Khorasan with honey my favorite loaf ever it’s soft it’s lacy it’s yummy 🤤 

I’ve had alot of people reach out recently in Brisbane wanting sourdough classes, to how to achieve this lacy soft sourdough crumb… it’s something that I am considering for Brisbane area moving forward 👌 so if you are interested send me a dm so I can have an idea of numbers and try and find the space etc to work out some classes.

50 shades of dough 😈

Sound on for the full effects of this sexy sourdough story, for the people who like their novels a little steamy 😂📖 here’s my steamy romance novel.

I started by folding her in half, then in half again, a little teasing, a little squeezing, making sure she knew she was in good hands 😏 A few gentle spanks before tucking her in for the night, leaving her to rest before I came back for more…

By morning I had her back on the bench, running my hands over her curves and giving her some gentle spanks, then I was a very “bad baker” and put rice flour on her… or so a baker in my comments recently told me. If that shocked him, he definitely wasn’t ready for the rest 😈😂

Then I reached for the little packet and slowly peeled it open, fitted my fresh blade and took my time, one hand keeping her steady while the other made its move… a gentle stroke and she opened right up, clearly the overnight anticipation had done its job 😏

Things got hot and steamy in the oven, all that tension finally released, and she came out a whole new lady, golden, glowing and wearing nothing but a little rice flour 😍🤣

I left her on the bench to catch her breath, looking far too good to keep my hands off… but a good baker knows when to let a lady recover 😂

Let’s see how many of you make it to the happy ending 😈😂 haha not many read and I love adding little Easter eggs into my post hahaha. Expect the unexpected.

A little dough and some deeper thoughts 🌾

There’s something about the sunlight falling across my bench, the blade moving through the dough, working with my hands, that brings my attention back to the life happening right in front of me.

The world is busy, there’s always somewhere to be, something to finish, something else asking for our attention. It’s easy to carry that rush into everything we do, to finish one thing and move straight to the next without giving ourselves a moment to enjoy any of it.

I’ve been thinking about how important it is to stop sometimes, to slow down enough to actually be present. To sit outside for a while, listen to the birds, notice the warmth of the sun, have a conversation without already thinking about what needs doing afterwards.

Baking, gardening, art and craft give me that space. I settle into what my hands are doing, feel the dough, work the soil, watch something take shape. There’s pleasure in creating something slowly, giving it care, seeing it through and taking a moment to appreciate what I’ve made.

It reminds me that our days hold more than the things we need to get done. There’s beauty in the familiar things too, the garden we walk past, the food we prepare, the people we share our homes with. Slowing down gives us time to notice them, to feel connected to the life we’re already living.

The world will keep moving, there will always be more to do. I think we’re allowed to let a few things wait, to talk with someone, linger in the garden, enjoy the bread we’ve spent hours making. Anything that actually brings you back to the present.

These moments deserve time. 🌿

This one’s 75% hydration with 20% Khorasan, and the crumb profile has changed so much from that little increase from 73% to 75%, with a more defined, honeycomb-like network and less of that fine lace 🥰 Very interesting, I love the science behind baking!

Personally, I much prefer the texture of this flour blend at 73%, and I think it’s important in baking to experiment and notice those little differences, it’s crazy the difference and extra 2% hydration can do it all comes back to what the baker is personally trying to achieve 🥰

This is one of my favourite lamination videos 🥰 I’ve explained what I was doing in the comments before, and everyone loved the information, so I thought I’d give it its own post.

It was a very hot day, and when I checked the dough temperature during mixing, it was much hotter than I expected. I needed to bring it down a considerable amount, fast, so I immediately tried to save it with a last-minute idea. This was a batch of five loaves, and my thinking was that putting that whole mass of dough in the fridge would take too long to cool the centre, so I stretched it out to expose more surface area and help release the heat quickly 👌

I usually only laminate to add ingredients, but this time I cranked up the air con, gently stretched the dough out, then lightly rubbed a few ice cubes over the surface before folding it back together. The internal temperature dropped really quickly, and I was so happy with how well it worked 🥰 pretty interesting I thought 🥰 I was very happy it worked so fast and I saved this dough.
