It’s officially soup season, and I’m not mad about it. 🍂🍲

There’s just something about a big pot of homemade soup simmering on the stove that makes everything feel a little cozier.

Always looking for new soup recipes to make it through the fall + winter.

Found this new chicken, spinach and tortellini soup from @thecleaneatingcouple - it will definitely be added to our soup rotation.🍲

Who’s ready for soup season?! 🙋‍♀️

Drop your favorite soup recipe in the comments so we can all share. I’ll put them all in a note and share. ❤️

high protein spinach & artichoke dip! 💚🧀🍴

this one is a little lighter than the classic, using cottage cheese + plain greek yogurt while still giving you that cozy, cheesy taste. paired with @firehook crackers and it’s the perfect dip situation!

recipe from: @thecleaneatingcouple

RECIPE:
-14 oz chopped artichoke hearts, drained WELL (about 1.5 cups)
- 5 oz frozen spinach, thawed + drained WELL (about 2.5 cups)
- 1 cup nonfat plain Greek yogurt
- ½ cup small curd cottage cheese
- 1 cup shredded mozzarella, divided
- 1 cup shredded cheddar, divided
- ¼ cup grated Parmesan
* ½ tsp black pepper
* ½ tsp garlic powder
* ½ tsp onion powder

1. Preheat oven to 400°F.
2. Thaw + drain the spinach VERY well. Squeeze out as much liquid as possible to prevent a watery dip
3. Mix artichokes, spinach, Greek yogurt, cottage cheese, ½ cup mozzarella, ½ cup cheddar, Parmesan and spices
4. Transfer to an 8x8 baking dish & top with remaining mozzarella + cheddar
5. Bake at 400°F for 25 minutes. Broil for 1–2 minutes until golden + bubbly.

serve warm with firehook crackers!

I’ve really got to stop saying “this is one of the best things I’ve ever made” whenever I try a new recipe 😅Italian wedding soup orzo from @thecleaneatingcouple and it’s amazing. I should have expected nothing less because their broccoli cheddar chicken orzo recipe is already one of my favorites! #chefmads #mealprepping

I am loving @thecleaneatingcouple’s Easy Healthy Dinners cookbook. Every recipe I make is truly efficient and simple but really delicious. This is a chicken pesto pasta, and as always, I used @hero pasta for that extra fiber and protein making this a super nutrient dense meal (guys at Hero, I beg you not to only have the spirals as a limited edition. I love it so much.)

Baby it’s cold outside.

When I woke up this morning, the Feels Like temperature was -18 degrees Fahrenheit. I’ve coveted the ice-covered-eyelashes-look since I first saw them on the lucky Fairbanks, Alaska folks, who experience -40 degree temperatures each winter. So, after taking a bundled up, brisk, 34 minute sunrise walk, I got some. Not a lot, but enough to make me happy.

Sported hat head in church this morning, but the sun was shining brightly through one of my favorite stained glass windows.

I splurged and bought a bunch of baked goods from Torino Bakery, then gazed through the windows at my favorite chocolate shop (I was bummed it was closed today).

Will be celebrating the Super Bowl a little differently this year, but I made @thecleaneatingcouple’s Heatlhy Buffalo Chicken Dip. I’m looking forward to polishing off most of it while I watch the game. Ahem, while I watch the commercials and Bad Bunny.
