Ignorance isn’t bliss, at least when you’re George & Lara

There’s a quiet cohort congregating @restaurant.sem this weekend. Not for hype. For respect.

They are closing the restaurant tomorrow; a decision wrapped in barbed wire.

When you decide not to conform to commercial popularity (for good reasons), there will be blood.

Iv not seen anyone burn out as much as George; other than perhaps myself in the early Silo days.

I’m so glad they are closing the restaurant, when they rest, they will grow. Growth that couldn’t be achieved on the front line of service.

Iv eaten at SEM five times and each time i’v witnessed culinary growth. Maturity, complexity, deliciousness & sophistication. They aren’t just cooking - they have given birth to a new style of cooking.

Those who know you feel it —
that ruthless authenticity.

Liam wanted his dad’s old Persol frames cleaned up. We put in new polarised lenses and my dad polished the acetate & restored the frame amazingly. I need to get on the polishing mops again! I wish I took a before shot 🤦🏻‍♀️ They look incredible 🌟

Today we celebrate the promotion of Moonhyung Lee to our head chef 🥳

From an apprentice to leading the kitchen in four years speaks volumes for this bright star.

We’ve turned broken glass into diamonds, veg scraps into treacle & whey into liquid gold… but they don’t compare to this extraordinary transformation.

Everyone who’s worked with Moon, share a little comment, your favourite Moon memory if you please…

She’s our new fearless leader, moulded by a fearless leader, at the intersection of meticulous preparation, Moon glides silently through the kitchen making everything better, smoothing the rough edges and turning stress into joy. She’s a Jedi on the pass and on the grill, in the prep kitchen and in the office…. She brings more organisation than a bank heist and brings more stability than a tonne of concrete.

We are blessed to be led by the light of @moonherelee #futureleaders
