COWGIRL COOKING 🍳🔥Dutch Oven Pizza 🍕

Use your favorite pizza dough or @theovenlight has an amazing no-rise pizza dough recipe that I used in this video!

Ingredients:

- Enough Pizza Dough for one 12-inch Pizza or whatever size your Dutch oven Is
- Your Favorite Pizza Sauce
- Corn Meal for dusting the pot
- Toppings: Cheese, Pepperoni, Peppers, Bacon, Sausage, etc.. (Prepare these in advance)

Instructions:

1. Start your fire and let hard wood burn until you have coals or start charcoal coals and let them burn until gray and smoky.

2. Create a ring of about 11 coals on the ground and set your oiled Dutch oven directly on top of coals with the lid on, and add roughly 22 coals on top and let sit for 20 minutes to preheat your oven. Our goal temp is about 450 degrees.

3. Open the lid (using the correct tools PLEASE) and dust the pan with cornmeal. This will give your pizza a nice crunch and prevent it from sticking to your oven.

4. Try to pre-shape the dough the best you can and slide it into your pot on top of the cornmeal. Spread lightly with your fingers until it fills the pot, be careful of the heat.

5. Quickly add the toppings! We usually do sauce, cheese, pepperoni, and all the meats we prepared in advance.

6. Close the lid (with the correct tools again) and bake for 13 - 15 minutes if you’re using a 12-inch pot. The smaller it is, the less time you’ll bake. Turn LID 1/2 way through to avoid hot spots.

7. Depending on the heat of your pot you may need to bake slightly longer, check at 15 minutes and adjust accordingly.

8. Use a spatula to pull pizza out onto a plate and cut! Enjoy 🧡

Note: try not to let it sit in the pot after it’s done baking or the bottom may be overdone. Also keep in mind hot coals lose their best heat after about 40 minutes, so if you’re making multiple pizzas you’ll need to relight some coals or add new from the fire on top / around the bottom.

A lil late night meal prep for postpartum - part 2 🍌👩🏼‍🍳

I’m in my third trimester, and so that means it’s time to meal prep for postpartum! This is my second child and I decided to be proactive this pregnancy about making sure we have a handful of breakfast meals prepped and frozen for easy access once baby arrives. Less stress, less chaos, less scrambling …all things I know I’ll be grateful for once I have another newborn! 🍼🫶🏻

Recipe here was from @theovenlight - with a few of my own touches!

Berry Oat Bars Recipe👩🏼‍🍳⏲️ from @theovenlight

Ingredients:
½ cup coconut oil (melted)
1 ½ cups all-purpose flour (or gluten free substitute)
1 ½ cups quick oats
⅓ cup maple syrup
⅓ cup coconut sugar (or granulated)
1 teaspoon baking powder
½ teaspoon salt
½ cup raspberry preserves

Instructions:
1. Preheat oven to 350°F. Spray an 8x8 baking pan with non-stick spray. Set aside.

2. Mix all ingredients in a large bowl, except for preserves.

3. Using your hands press 2/3 of the mixture into the bottom of your pan until it’s even and relatively flat.

4. Gently spread preserves, leaving 1/2” around the outside. (The preserves will scald if up against the edge of the pan.)

5. Using your hands, evenly crumble the remaining 1/3 of the mixture over the top of the preserves and lightly press so the crumbles stay in place after baking.

6. Bake for 25-30 minutes on a center rack until lightly browned on top.

7. Let cool in pan on top of a cooling rack. Cut and serve!

Let me know if you try it!👌🏼

Baking is my therapy and love language. I start playing some @trevorhallmusic and I’m ready to bake.

I love to focus on the process of baking, and obviously the product is tasty. It’s even better when I share cookies with my family, friends, and coworkers.

I’ve been making these gluten and dairy free copycat Milanos for over a year, and they always get rave reviews. The cookie sandwich is light, and melts in your mouth. Then you get hit with a touch of rich ganache in the middle. The hardest part is waiting for the chocolate to set (which I didn’t do in the video)!

A Savory Yoat Bowl? Don't knock it till you try it!

Have you ever tried savory oatmeal? I usually prefer oatmeal sweet, but I've seen a recent trend of savory oatmeal recipes, so I decided to give it a try and create my own take, a savory yoat (yogurt plus oatmeal) bowl!

I based this recipe off of the everything but the bagel yogurt dip recipe from @theovenlight

Together I mixed:
0.5 cup plain fat free Greek yogurt
0.5 cup quick cooking oatmeal
0.5 tablespoons olive oil
Everything but the bagel seasoning.

Stir stir stir! This recipe is 7.1 bites on Healthi Carb Conscious. It's roughly 300 calories, 7.5 grams of fat, 17 grams of protein, 32 grams of carbs, and 4.5 grams of fiber.

It's delicious and a perfect breakfast or lunch for bagel lovers tired of bagels! I paired it with a fresh apple.

Late Night Dinner:

.
.
Then added:
.BBQ sauce.
