Just like the store-bought, but without the dairy or gluten! 

Ingredients
½ cup plant butter use your favorite butter substitute (or real butter if you don't mind the dairy)
1 ¼ cup powdered sugar
1 teaspoon vanilla extract
1 large egg room temperature
1 ¼ cup gluten free flour blend I like King Arthur Flour Measure for Measure
½ teaspoon salt only use if your butter is UNSALTED
1 ½ cup dark chocolate chips Guittard is naturally dairy free, but feel free to use your favorite dairy free chocolate
1 teaspoon coconut oil or shortening
Instructions
Preheat oven to 350°F. Line baking sheet with parchment paper. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment, blend butter and powdered sugar until light and fluffy (about 2 minutes)
Add vanilla. Mix until blended.
Add egg. Mix until blended.
Add flour and salt, mix until just blended.
Scoop dough into quart sized zip-top bag. Snip ½" from one bottom corner for piping.
Pipe dough in 2" lines onto parchment paper about 2" apart (they don't spread much). I can usually get all the dough onto 2 large baking sheets. It should make about 50-60 individual cookies.
Once piped, wet your finger and gently press the tops of the dough down until the shape more closely resembles a classic Milano cookie. This step keeps the cookies thin and crispy. Rewet finger as needed.
Bake cookies for 13-15 minutes, rotating trays half way through to ensure an even bake.
While cookies are baking, place chocolate chips and oil into a microwave safe dish. Heat at 30 second intervals until fully melted, stirring after each interval.
Remove cookies from oven and place on cooling rack. Once cooled, use a spoon to spread about 2 teaspoon of chocolate onto the flat side of a cookie, top it with another cookie and set aside to let the chocolate set.

Rich and creamy no bake chocolate tart, no dairy, no gluten! Stunningly easy. 

Ingredients
For the Crust
1 ⅓ cups pecans
1 ½ cups old fashioned oats
¼ cup coconut oil
2 tablespoons honey
¼ teaspoon kosher salt
For the Filling
2 ¼ cups dairy free chocolate chips or 16 ounces
13 ounces can full-fat coconut milk one can
1 teaspoon vanilla extract
pinch of salt
Instructions
For the Crust
Lightly grease the bottom and sides of a 9" spring form pan. Set aside.
In a large skillet, gently toast pecans and oats for about 5 minutes or until pecans are fragrant.
Pour pecans and oats into a food processor. Blitz until very tiny pieces. About 30 seconds.
Add coconut oil, honey and salt. Blitz again until mixture starts to come together, about 15 seconds.
Using a cup or jar with a 90° angle, evenly press mixture into the bottom and sides of the pan.
Chill in the refrigerator for 30 minutes. This step keeps the chocolate from seeping into the crust.

For the Filling
In a small saucepan, heat coconut milk until steaming, not boiling.
While milk is warming, place chocolate, vanilla and salt in a medium bowl.
Pour coconut milk over chocolate and let sit for about 2 minutes.
Stir chocolate mixture with a whisk or a spoon until silky smooth.
Pour chocolate mixture into chilled crust.
Chill entire ganache tart until set, or about 1 hour. Once chilled, it can be set at room temperature.
Serve with berries, dairy free whip cream and a sprinkle of flaky salt.

2 tablespoon orange juice
¼ C unsalted butter or if salted, omit ¼ teaspoon salt

Simple, hearty and healthy—the best weeknight comfort meal.

Ingredients
4 large Yukon gold potatoes peeled and cut into large hunks
1 Tablespoon olive oil
½ yellow onion diced
1 teaspoon chopped garlic cloves about 2 cloves
32 ounces chicken stock
3 cups broccoli florets frozen or fresh
1 ½ teaspoons kosher salt
½ teaspoon pepper
1 cup shredded parmesan optional, but so delicious

Instructions
Peel and cut potatoes into large hunks. Set aside.
In a large stock pot, sauté onion with olive oil over medium heat until translucent (about 3 minutes).
Add garlic and cook until fragrant. About 1 minute.
Add chicken (or vegetable) stock, salt, pepper, potatoes and broccoli. Cook potatoes until they are fork-tender and broccoli is softened (about 12 minutes).
Using a handheld blender stick, blend soup until desired consistency (we like it ½ blended, ½ chunks).
Add parmesan cheese and stir. Serve hot.
Add salt and pepper to taste. Top it off with more cheese, bacon and pepper.

Like magic, these rolls take about 5 minutes  to prep and then throw in the oven in the morning. Prepare for a heavenly aroma and an even better mouthful!

Ingredients
1 package frozen rolls about 25 rolls
1 4.5 oz package vanilla pudding NOT INSTANT
½ cup brown sugar
½ cup pecans chopped
½ cup butter melted

Instructions
The night before eating, butter a 10-12 cup bundt pan really well (get into all those nooks and crannies) and set aside.
In a small bowl, combine dry pudding mix with brown sugar and pecans. 
In a microwave safe bowl, melt the butter. 
Add 20-25 frozen rolls to your buttered bundt pan. (Don't overfill, they rise A LOT.) Pour melted butter all over and then sprinkle the entire dry mixture over that. 
Cover loosely with a towel and leave out overnight (8-10 hours), the dough rises by morning. 
Once dough has risen, preheat oven to 350°. Bake on center rack for 45-50 minutes until the rolls on top are well done. (I place a cookie sheet underneath to catch any pecans or sugar that might fall out.)
 Remove from oven and allow to cool slightly (about 3 minutes). Once slightly cooled, invert sticky buns onto a serving plate and serve! Enjoyed best while warm!

Ingredients
2 ¼ cups gluten free flour blend King Arthur Measure for Measure
2 ½ teaspoons baking powder
1 teaspoon ground cinnamon
1 ½ teaspoons pumpkin pie spice
½ teaspoon salt
½ cup unsalted butter cold
⅓ cup whole milk cold
1 large egg cold
½ cup canned pumpkin puree
½ cup light brown sugar

Maple Glaze

Easy fall dinner recipe for the win!

Ingredients
For the Pork Loin
2 pounds pork tenderloin
2 tablespoons olive oil
salt and pepper enough to generously cover the pork loin
1 tablespoon dried thyme or 2 tablespoons fresh thyme
2 tablespoons butter cut into 4 pats
For the Balsamic Fig Sauce
1 tablespoon butter
1 medium shallot finely chopped
⅓ cup water
⅓ cup balsamic vinegar
¼ cup chopped dried figs
½ teaspoon dried thyme

Instructions
Preheat oven to 350° F. Line a baking pan with heavy duty aluminum foil.
Generously season pork with salt and pepper. 
In a large pan, heat olive oil until shimmery. Add tenderloin and cook on all sides until browned. 
Place tenderloin on foil in the baking pan. Sprinkle with thyme on all sides. Place pats of butter on top of tenderloin. Wrap in another layer of foil.
Bake until an internal thermometer reads 150° at the thickest part of the meat. 25-35 minutes.
When pork is done, remove from oven and let rest at least 5 minutes to lock in the juices. 
Slice against the grain and serve with balsamic fig sauce.

Swirl Nutella into these Healthy Banana Muffins for an extra touch of YUM!

Ingredients
3 ripe bananas
¼ cup coconut oil melted
¼ cup honey or agave syrup
1 large egg room temperature
1 teaspoon vanilla extract
1 ½ cups all purpose flour or gluten free flour blend
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ cup Nutella

Instructions
Preheat oven to 350°F (180°C). Lightly oil a 12 muffin tin with non stick cooking spray or line with muffin liners. Set aside.
In a large bowl, mash the bananas with a fork until only small lumps remain.
To the bananas, add the oil, honey (or agave), egg and vanilla. Mix well.
Add dry ingredients to the wet ingredients and gently combine. Careful not to over mix. (Over mixing will give you tough muffins.)
Fill muffin tins about ⅔ full, which should perfectly use all the batter. Top each muffin with about ½ tablespoon of Nutella and then use a toothpick or knife to swirl into top of each muffin.
Bake on center rack for 12-15 minutes until the tops bounce back when touched. 
Remove muffins from pan right away (if using muffin liners), or wait 5 minutes (if not using liners) and allow to cool on a wire rack. Enjoy warm with some butter or more Nutella!

Easily the best gluten free pumpkin bread. Chocolate chips are optional but highly recommended. 

Ingredients
½ cup salted butter melted
1 cup light brown sugar packed
1 ½ cups canned pumpkin
2 large eggs room temperature
1 teaspoon vanilla extract
1 ¾ cups gluten free flour blend such as King Arthur Measure for Measure
⅓ cup almond flour finely ground is best
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon kosher salt
1 ½ teaspoons ground cinnamon
1 ½ teaspoons ground nutmeg
¼ teaspoon ground ginger
pinch ground cloves
1 cup semi sweet chocolate chips divided

Instructions
Preheat oven to 350°F (180°C). Line a loaf pan with parchment paper and spray lightly with nonstick spray. Set aside.
In a large microwave safe bowl, melt butter in 30 second intervals until just melted. Allow to cool a few minutes.
Add brown sugar to the butter and whisk until light and fluffy. (see pictures above for reference)
Add pumpkin, eggs and vanilla and whisk until evenly combined.
In a separate bowl mix together: gluten free flour, almond flour, baking powder, baking soda, cinnamon, nutmeg, ginger and cloves. Stir until evenly combined.
Add dry ingredients to the pumpkin mixture and stir with a wooden spoon until mostly mixed. Add ¾ cup of chocolate chips and finish stirring gently until no flour streaks remain.
Spoon batter into prepared loaf pan and smooth top. Sprinkle the remaining ¼ cup of chocolate chips on top. Place on center rack of oven. Bake for 60-70 minutes. Check for doneness by inserting a skewer into the center of the loaf. It is done when it has a few or no crumbs stuck to it.
Once done, remove from oven and remove loaf from loaf pan by holding the parchment paper. Allow to cool on a cooling rack for 1 hour. Slice and enjoy! by @theovenlight
