Not just a dosa, but a delicious piece of South Indian comfort!

Presenting *my version of Kal Dosa* soft, spongy, and full of character, with my own culinary twist.

*Did you know?* Kal Dosa is a popular Tamil Nadu speciality, traditionally thicker and softer than the classic crispy dosa. Its name is associated with the traditional stone griddle used to cook it!

Simple ingredients, beautiful textures, and flavours that bring South Indian food to life.

How to capture India in 20 frames? Not possible. TBH it took a while for me to lock down a date— and frankly to find the balls— but one day a loud and confident voice from within me just said: “GO.” And while five days is clearly not enough to fully capture the vastness and complexity of this sub-continent, my limited (and extremely pampered) perspective gave me a glimmer of the profound tranquility amidst the chaos. The astounding beauty beneath the city’s grime. And the generosity and sincerity of its proud people so willing to share their heritage with yet another clueless tourist. And the food. How can I even begin to explain that my standard for Indian cuisine is now impossibly high? I vowed to come back to see even more beauty, to experience more new things, and to consume even more incredible food. Maraming salamat and namaste 🙏🏼 #bangalore #chandigarh #kasauli #thepostph #onebigbiteph

Once upon a night in Chandigarh.

I was one of the journalists invited for a special 1947: The Taste of What Remains at Ikk Panjab, Chandigarh. An evening of poetry (I didn't understand much but it was moving), music and song. And, of course, absolutely delicious food. A butter chicken I am currently obsessed with.

The evening was designed to showcase the enduring legacy of Partition and hiw cukture indeed transcends borders.

Personally, it was a memorable experience, beautifully curated by Vernika @delectable_reveries, enhanced by the warm hospitality of @rajan_sethi @deepikasethii.

Bonus: I got to meet friends and writers from across India, and dress up in a saree (thanks to Insia and Ruth) 🌟
