A community supported agriculture farm serving greater Buffalo, NY since 2011

POSTS STORIES REELS TAGGED

The farm behind your box has a story worth knowing — and this one is one of our favorites.

@therootdownfarm in Clarence Center is run by Steve and Erin Blabac — a farm family that started with 50 CSA shares in 2011 and has grown into one of the most trusted local producers in all of Western New York. No synthetic fertilizers. No pesticides. No shortcuts. Just clean, principled farming on land they have carefully stewarded for over a decade — some of it protected forever by the WNY Land Conservancy so it will never stop being farmland.

They converted a tractor to run on electric. They use drip irrigation to conserve every drop of water. They rotate crops the old fashioned way to keep their soil healthy and their harvest clean. Every single decision on this farm is made with the long-term health of the land and the community in mind.

And the result of all of that care and intention? It ends up in your FreshFix box every single week.

Swipe through to learn the full story behind Root Down Farm — and the next time you pull something out of your box, know that it came from people who genuinely poured everything they had into growing it right.

Roasted Rice Cakes with Corn Butter

When I lived in Seoul, it took me a long time to come around to rice cakes. It was a texture problem. Eventually I started eating tteokbokki with fried things, and it clicked: I needed a crispy texture to see what the chewy texture was doing.

Years later in Buffalo, that experience led to this.

I had rice cakes in the freezer that needed to get used and a pile of late-summer vegetables from The Root Down Farm. Sweet peppers, onions and new potatoes went into a hot oven, followed by the rice cakes and corn until everything was roasted, blistered and charred around the edges.

The corn cobs became a quick stock with a bay leaf. I reduced that, added garlic and hot sauce, mounted it with butter, then dumped the entire roasted tray into a big metal bowl and tossed it like chicken wings.

It needed something fresh to finish, which led to thinly sliced celery and celery leaves.

Apparently a lesson brought home from Seoul was: if you're unsure about a chewy starch, surround it with crispy things and sauce it aggressively.

Served with a green salad dressed with sherry vinegar, garlic, gochugaru, nutritional yeast and Dijon.

Not Korean. Not particularly American. Definitely dinner.
