Scenes from the plate❤️‍🔥

That Texan BBQ is coming in perfectly slow-smoked at 110•C. Brisket is one of the nine beef primal cuts, taken from the lower chest of a cow, massaged by hand with our black pepper & coffee rub, smoked for 15+ hrs to perfect tenderness in our one-ton smoker from J&R in Texas. Our pitmasters @andrasvaszi & @rdraganow have mastered the technique of ensuring that the natural fats from beef brisket insulates & bastes the meat as it cooks, keeping all those juicy, tender flavours, while creating a savoury outer crust. That blackened part you see is known as the “bark”, and if you’re eating brisket without bark, it definitely doesn’t have bite😎

Fun fact: smoked brisket originates from Texas in the 19th century when Czech & Jewish immigrants combined Old World meat-smoking traditions with locally-sourced beef. We use only the best of local Swiss meats provided by our partner @lumadelikatessen, who works hard to ensure that we receive the highest quality products. Make sure to try our beef sausages, a very special recipe we created together with Luma that is only available at our restaurant.

Grab our beans as a side dish, and one of our signature cocktails by our bar manager, @giuseppeeatgrapes which is the perfect match for your plate and palette🥃

Looking forward to welcoming you soon!

Your Brisket Team🚀

Viaduktfäscht 2026🚀🔥

Friday 4. Sept & Saturday 5. Sept. Two days. 10hrs each. It was a absolute blast. Maurizio, Thomas (von Matt) & Thomas (Egli) served out the best of Brisket’s menu in front of the @streetfiles shop, who we partnered with for the festival. Thank you again, Streetfiles! Always an honour to work with you guys💘

On Friday we sold out of food three times😅 Thankfully Brisket is around the corner so we were able to run over to grab more smoked meats from the team. Saturday went exactly the same🥵

It was such a vibe, the DJs playing all evening were on point🧨 The energy was killer, and we had the best time serving you. Thank you to everyone who came by! You gave us a weekend to remember.

Special thanks to our suppliers for your support: @lumadelikatessen @turbinenbraeu @bacardi @backimholz Intercomestibles & Frigemo♥️

Last night with the team from @fcbruschgol in Brunnen, Schwyz⚽️😎 These legends are a great group of kids who finished their year end training in 37 degree heat🫠 The last few years, The Bite has been making burgers for this team during their final training session before summer holidays begins. We were honoured to be part of it again this year, and bring our burgers out for the evening.

The real heroes are the volunteer coaches who brings everyone together every Friday evening throughout the year to teach football skills, leadership and community building to the group. You guys deserve the recognition as role models who volunteer their time every week🏆 What an incredible initiative and we‘re just honoured to celebrate how much love and support this group offers. You’re doing something very special. Looking forward to serving you burgers again next year. Until then, enjoy your summer holidays, kids🧊🍔

Special thanks goes out to @ivowoodart for introducing us to this amazing organization. We’re happy to support in the small way we can🤝
