Last night with the team from @fcbruschgol in Brunnen, Schwyz⚽️😎 These legends are a great group of kids who finished their year end training in 37 degree heat🫠 The last few years, The Bite has been making burgers for this team during their final training session before summer holidays begins. We were honoured to be part of it again this year, and bring our burgers out for the evening.

The real heroes are the volunteer coaches who brings everyone together every Friday evening throughout the year to teach football skills, leadership and community building to the group. You guys deserve the recognition as role models who volunteer their time every week🏆 What an incredible initiative and we‘re just honoured to celebrate how much love and support this group offers. You’re doing something very special. Looking forward to serving you burgers again next year. Until then, enjoy your summer holidays, kids🧊🍔

Yesterday our darling baby Peanut crossed the rainbow bridge 🌈 Just a couple days before her 7th birthday. She was happy yesterday, doing her favourite activity - playing frisbee with her dad.

Peepee brought so much joy into the world and was a truly special pup who was always ready to go on an adventure. She even rode on the back of a motorcycle this year. This restaurant dog loved to go to Brisket after lunch service to clean up the french fries off the floor, and always tried her best to sneak her way into the kitchen to smell the meat. She went to parties, joined every roadtrip, even travelled the city on courier bike whenever she was allowed. Her love for riding the bus never ceased to amaze us. This potato-shaped angel baby will forever be in our hearts and I feel very blessed that she chose to enter our lives. Love you, Peepee bear🧸💕 by @thomasvonmatt

When you’re lucky enough to collaborate with your friends, and can still call it work✌🏾😛 Birds & Bubbles Vol. II took place at Yardbird Weststrasse a couple of weeks ago. We had so much fun teaming up with the champagne brothers of Zurich to do our second event together.

@drunken_grapes & @yardbird_ch forever👐🏾 Fried Chicken & Champagne Never tasted better.

Thanks to all of our amazing guests for coming out that night. We had a blast….and you cleaned us out of champagne 😂 I guess we’re going to have to restock

Part III of the BBQ trip takes us to @terryblacks_bbq in Austin, TX. I don’t think I’ve seen a lineup as large as this one in my life, and we were getting ready to leave after thinking it’ll be another 3h lineup to wait through. Thankfully we smelled the smoked sausages and decided to wait it out. The crazy part is that we ended up getting served within 30min🤯 Magic? I think yes!

Here’s the story about this bbq house…it was opened in 2014 by a set of twin brothers, Terry Black’s two sons and his daughter. They come from a dynasty of pitmasters and are the fifth generation to work in the bbq trade. Their family’s beginnings take you to Lockhart TX where they pioneered the true Texan bbq movement at @lockhartsmokehouse, an institution of Texan BBQ scene, and a must see if you’re in the area👑 With all this knowledge snd secret family recipes, it’s no wonder that they’re a staple of Austin’s food scene.

The cuts that you shouldn’t miss at Terry Black’s: it’s central Texas, so their Brisket is incredible, but more than that, we loved the giant Beef Prime Rib🤤 It’s juicy, it’s succulent and it’s about 3lbs (1.2kg) bone on🤯🙈 This is a spot we definitely recommend adding to the list.

Part II of the journey takes us an hour outside of Austin, to what some say is the Mecca of Texan BBQ, @saltlickbbq, located in Driftwood, TX. The meats at Salt Lick are slow smoked and then finished off over an open fire bbq pit, made of limestone that comes from their land, and is fed by oak wood. To keep the fire temperature strong, they throw pecan shells soaked in water over the flames🔥

While the different cuts are finishing off over the open flame, the team covers the meat with a homemade Salt Lick BBQ Sauce, which is high in sugar & acid content, helping to caramelize the crust of the meat. Crispy on the outside, perfectly juicy on the inside. Brisket’s are slow smoked for nearly 24h at a very low heat, pork ribs 3h, and sausages nearly 4h.

Highlight from the menu? Definitely the Bison ribs🦬 Actually let’s correct that to Bison”rib” as a single portion can feed three people😅 Thanks again to the team from Salt Lick for taking the time to show us behind the scenes👊🏽

Quick trip to the heart of Texan BBQ country. The owners of Brisket, Thomas & Kirtanya, spent the past couple weeks travelling the South and the first BBQ house they hit was @truth_bbq where they had the chance to meet Pitmaster, 🍖Searcy Booker @king_bookah and also the owner of Truth, 👑Leonard Botello @leo_botello_iv, who both really took the time to introduce their practices of smoking meat while sharing their knowledge - gentlemen, we are eternally grateful that you took the time🙏🏾 There’s some great techniques that they learned from these two men, things that we are excited to introduce at Brisket here in Zürich as well!

For those of you travelling to Texas, make sure to go visit Truth BBQ in Houston. Things that you shouldn’t miss are their beef brisket, pork ribs & jalapeño smoked sausage. This year Truth was crowned as one of the top 3 BBQ houses in the State by @texasmonthly which is the most relevant publication that chronicles news and happenings within the barbecue community in Texas. If you’re not following them, make sure to do so🤝

Christmas Eve was a blast🎄🎅🏻❄️ Last night we spent the evening serving dinner to 130 guests at the Salvation Army in Zurich. It’s the third year in a row that we‘ve catered this event, and this year each of our restaurants contributed one course: @thebiteteam prepared the starers with a delicious and hearty vegetable soup, Brisket prepared the mains with a juicy and flavourful Hackbraten with cream potatoes, seasoned veggies topped with a jus, @labrea_ch contributed the dessert with a melt-in-your-mouth chocolate ganache, and @yardbird_ch coordinated the entire pick up and drop off from each of the restaurants to the @heilsarmee.armeedusalut.

We were so blown away by the number of volunteers with their organization, who bring so much professionalism and heart. It was a pleasure working with all of you last night! And to the organizing team from the Heilsarmee, you work tirelessly to make your guests feel special, and that is hospitality at its finest💫

Speaking of generosity, to our incredible team members for putting in so much love and energy to making this delicious meal. You guys are truly amazing chefs @remozieri👨‍🍳 @xaroulampata👩🏻‍🍳 @cedricrechsteiner👨‍🍳 @spiros_fotos👨‍🍳 And a huge thank you goes out to @sevda_k_aydin our GM at Brisket who coordinated this event🙏🏾
