Making my seasonal Apple Cider Sourdough is a labor of love, and I literally use every bit of the apples. I start with a bin of locally grown 2nds, mostly honeycrisps with other varieties thrown in.

The apples are peeled, cored, and diced into little cubes which are then dried for a few hours in my oven until they are leathery. The dried apples are mixed with the dough (which includes local apple cider) and baked in a loaf pan. It’s great toasted with butter, or cut it thick for a delicious apple French toast.

The cores are thrown in the yard for the squirrels.

The peels are chopped up and mixed with a variety of seeds, oats, crushed egg shells, cinnamon, red pepper flakes, and black fly larvae, and fed to our chickens.

Our Apple Cider Sourdough will be available at the Oakland Mills Farmers Market on 10/4, 10/25, and 11/1.
