Diego Baraona, a very well known name among the specialty coffee roasters. His father Gilberto Baraona has been a pioneer in growing Pacamara plants to the highest level and won several awards and recognition for his work. In 2020 he passed away after a COVID infection and set many of the coffee scene at a schock, since a farm by its nature is far away from cities and that likelihood was so little. In honour of his father, Diego has been taking over the heritage and pushes quality in growing and farming some of the very best Pacamara lots in the scene. All that on a spectacular hill side of a volcano, which not only nourishes the plants with minerals but also provides a ideal breeze to slow down the growing of the fruits and by that create a more complex final seed within. A coffee that we have been featuring for so many years and always a sign for the start of Autumn in Europe. Enjoy brewing this one! This coffee has been growing in the Kaffa region, the birthplace of coffee. In close relationship, Negussie and Tim have been rising the bar to an exceptional level. Working together for over 8 years just when Ethiopia had been opening up the market. A coffee that you clearly shouldn’t miss at any season. Following along the developments and also change of climates as well as trying out new path on farming, processing and drying. Roasted perfectly clean like always from Oslo arrivals. No chance we miss out on Kenya by Tim Wendelboe! This is our second Kenya from him this year and it delivers! Blackcurrants, a hand full of it. Grown on the hills of the well know Nyeri Region in Kenya. Delivering that stand out Kenyan Profile we all look for. Delicious on Aeropress that one!! That’s how good Colombian coffees can be. La Fuente from Koppi is another classic from the nordic scene and known for its vibrant red berry profile. Colombia often kick-off acidic and then flatten out immediately – this one tho, is full bodied and sweet and a coffee that we brew year after year. Roasted perfectly clean by Mr. Charles Nystrand. Costa Rica, producing some of the very best nutty and sweet tasting coffees out there! And so does the very well known Porras Family at Monte Cope

Day 251 and this recipe gave one of the sweetest cups yet. I've been brewing this washed Ethiopian either using the 4:6 or Glitch recipe before, but tried the Ogawa lab recipe which really surprised me. A COFFEE JOURNAL - COPENHAGEN Coffee has always been more than a morning ritual for Maria. It's a curiosity, a passion, and an important part of life at Haus Mannenberg. During a recent visit to Copenhagen, Maria joined an intimate gathering at CABIN, the beautifully considered coffee bar created in collaboration with FRAMA. The afternoon was spent with Norwegian coffee pioneer Tim Wendelboe, exploring his Finca El Suelo project in Colombia - an ongoing experiment in regenerative agriculture, soil health and the pursuit of exceptional coffee. An opportunity to taste, learn and exchange ideas with people who share the same appreciation for the craft. At Haus Mannenberg, good coffee has always been part of our philosophy of hospitality. From carefully selected beans to the quiet ritual of preparing the first cup of the day, it's one of those small details that matter to us. Because sometimes, the simplest things deserve the most attention. - Copenhagen, October 2026. With thanks to Cabin and Tim Wendelboe for a memorable afternoon.
