An Education in Caffeination
A coffee podcast by @bdserna and @kaffeinehilberg
POSTS STORIES REELS TAGGED
Most cafés don’t have a coffee quality problem – they have a training problem. Kathie Hilberg breaks down what makes barista training effective, when roaster-led education is enough, and when a more advanced approach is needed to develop both people and performance. In our recent podcast episode, Andrew Tolley sits down with Kathie, a seasoned barista, educator, competition judge, and specialty coffee professional with 15 years of industry experience. Together, they explore the real return on investing in training. If you’ve ever wondered whether staff education is worth the cost, how to build confidence behind the bar, or why great coffee can still fall short without the right team, this conversation offers practical answers. The episode covers answers to the following questions: - Where can cafés actually access training? - What are the components of a good training programme? - What are the essential skills of a barista in a coffee shop today? - What are the essential skills for a trainer? - And so many more. Plus, tips for our listeners on career progression and how to approach different job roles. Kathie also shares her own career journey – from competing as a barista and Brewers Cup competitor to judging, leading with the BGA and SCA, educating coffee professionals, and moving into specialty tea with Spirit Tea. Her story offers valuable insight for anyone considering their next step in coffee, hospitality, sales, or education. Find the link to the podcast episode in our bio.

Welcome to the June + July 2025 issue of Barista Magazine! We’re thrilled to feature Spain’s Dara Santana on the cover of this special issue. Dara is a chemical engineer specializing in merging the senses with the science of coffee. Specifically, her work has had an enormous impact on water quality development for coffee. It’s why she’s known in specialty coffee circles as the Water Wizard. Here are some of the other awesome features in this brand-new issue: • Check out the poster we created for you that charts everything you need to know to stay on top of preventative maintenance for your café equipment! • We all know plant milks taste differently than dairy, but how do they vary in performance when prepared for espresso drinks? We dive deep into this subject in the article, “From Oat to Art.” • Is the C Market more scary than it’s ever been? Not necessarily. “Thrills & Chills: Riding the Supply, Demands, and Disruptions of Today’s C Market” was put together with café owners in mind. • Hey, it’s Jenna G! We’re stoked to feature longtime educator, competitor, barista advocate, and WNBA superfan Jenna Gotthelf in this issue’s “One on One.” And there’s so much more! Matthew Campbell answers equipment questions in “Tech Talk”! Laila Ghambari talks pop-ups! We get into the nitty gritty of the controversy surrounding infused and co-fermented coffees. We visit the vibrant café scene in Aarhus, Denmark. We learn about Little Waves Coffee’s extraordinary Curious project, and much, much more! Read this issue in its entirety at baristamagazine.com now, and be on the lookout for your print copies in your mailboxes soon! #newissue #baristamagazine

New episode coming August 12 (in 8 hours)! We team up with @totallydissolvedpod to take a deep dive into the science behind the new flavor wheel. To really understand it, you need to read two papers, and access the @worldcoffeeresearch lexicon. It may surprise you to learn that the lexicon was primarily developed by a panel of 5 people, with prior experience tasty sausage, soy sauce, and… something else. Maybe that explains some of its curiosities. I’m curious how you would answer the question: if you could subtract one flavor and add one flavor, what would you do? Tune in to Coffee Lit. Rev. tomorrow! #coffee #podcast #flavorwheel #science

Meet Major Cohen. Major is a coffee lover who has enjoyed a dream realized. A teacher of photography and film at the high school level for 20 years, he grew up in a time when coffee went from a poor quality, inexpensive commodity to a ubiquitous and often delicious inexpensive luxury. His second career brought his passion for teaching and passion for coffee into alignment and he worked as a coffee educator for more than 25 ½ years for Starbucks. His work for Starbucks began in 1995 when, as a Barista, he leveraged his passion and curiosity for coffee and business and after 8 years in operations in 5 roles was invited to move to the Seattle headquarters and join the coffee team. In the next 17 years he had the opportunity to be part of some of Starbucks most innovative efforts, and during his final 7 years traveled extensively in Asia as a coffee educator and brand ambassador. Major retired from Starbucks in 2020. He has continued his involvement with education as an Authorized Specialty Coffee Association trainer, an AST, and in February 2021 his book, Coffee for Dummies, was published. He is consulting for some intriguing coffee start-up ventures and enjoying lots of great coffee at home in Seattle. Want to know more about specialty coffee, Coffee for Dummies, and Major? Join us tomorrow for Season 5 Episode 1 of Totally Dissolved! #coffeeeducation #specialtycoffee #coffeelovers #majorcohen #coffeefordummies #coffeefordummiesbymajor #barista #totallydissolvedpod
