Meet Omar Herrera.

Omar is the green-coffee buyer for Mexico and Colombia at Cafe Imports. He got his start in coffee in 2012 at a small roastery in the Midwest, where he was first introduced to @cafeimports and their generous hospitality. Since then, he’s been working towards building a more transparent and equitable supply chain in coffee. Omar really likes coffee, but also enjoys snowboarding, sport climbing, and long walks in the mountains with his pup Tejo.

Meet Bryan Choi.

Bryan Choi is the co-founder of Ondo Coffee Co., a multiroaster coffee shop located in Los Angeles, CA. With an entrepreneurial background in the fashion industry, Bryan gradually fell in love with specialty coffee scene. This journey led him to open The OX LA in 2019. Although The OX closed during the pandemic, Bryan remained active in the coffee industry, participating in coffee competitions and eventually launching Ondo Coffee Co. in 2024.

the founding of Port of Mokha, a coffee company
aimed at revitalizing Yemen’s historic coffee
industry. Under his leadership, Port of Mokha has
achieved critical acclaim for its high-quality, with
Alkhanshali’s work bringing international
attention to Yemeni coffee’s unique qualities and
challenges.

Alkhanshali’s story gained worldwide recognition
following the publication of New York Times
bestseller “The Monk of Mokha” by Dave Eggers.
This biography details Alkhanshali’s extraordinary

restoring Yemeni coffee’s lost heritage. The book

Dr. Christopher H. Hendon is a Professor of Computational Materials Chemistry at the Univeristy of Oregon. His interests are in energy materials and coffee science. Prof. Hendon’s interest in coffee began during his PhD, and since then has published several peer-reviewed articles and a book, Water For Coffee. He enjoys washed African coffees, dry Rieslings, and east coast oysters.

Meet Elizabeth Chai.

Elizabeth Chai built her Graphic Design career as a coffeeshop dweller and coffee consumer. After a Design Director stint with Octane Coffee in Atlanta, her passion for advancing the industry convinced her to focus her design, branding, illustration, and photography skills exclusively within Specialty Coffee. Her love of “coffee+design” has resulted in extensive travel to see as many cafés around the world as she possibly can for the design and development of a Coffee Travelers Journal.

In 2015, Elizabeth traveled across the United States on a 3-week #CrossCountryCamperCoffeeCrawl, living in a Linea Mini-outfitted teardrop camper, visiting 35 different cafes between Atlanta and Portland. She worked on the La Marzocco USA team from 2018 to 2023 as Creative & Design Director, and recently joined MiiR as Creative Director while continuing to freelance on coffee-related design and photography projects. As a freelancer, Liz has worked with clients such as Slayer Espresso Machines, Sprudge, Junior’s Roasted Coffee, Swiss Water Decaf, and Wallflower Coffee Co.
