The moment many of you have been waiting for is here: TOFU FRIED RICE🤩
.
Ever since making this for the first time a few weeks ago, it has become such a staple because it requires ingredients that I usually have on hand and takes minimal time to cook! .
The time it takes to cook my meals is becoming increasingly important to me as I start the new school year, student teaching, and work on product and business development👍🏼 so you will likely see some short cut meals for the next few months.
.
Tofu Fried Rice
•1 1/2 cups of firm tofu, crumbled •2 cups of cauliflower rice
•1 cups of cooked brown rice
•1 10oz package of frozen peas and carrot medley
•1.5-2 tbsp of coconut aminos
•1 tbsp of aminos
•1 tsp of garlic powder
•1 tbsp of nutritional yeast
•1/4 tsp of red pepper flakes (optional)
•avocado oil spray
•salt and pepper, to taste
•optional toppings: green onion, sriracha sauce, sesame seeds
.
Heat a large skillet to medium heat and spray with the avocado oil. Add the cauliflower rice to the warm skillet, season with salt and pepper, and cook until tender. Once tender, add in the cooked brown rice and package of frozen peas and carrots. Stir together, then push the mix to the sides of the pan to create a circle in the middle that exposes the pan. Add the crumbled tofu, nutritional yeast, garlic powder, salt, and pepper to the exposed part of the pan. Mix the tofu with the seasoning and cook for approximately 5 minutes. Stir the tofu with the rice mixture, and add the coconut aminos, aminos, and red pepper flakes. Adjust flavor to your taste, then serve with green onion, sriracha, and sesame seeds.

Have any of you tried making homemade tortillas before?? This was my first time, and I am officially OBSESSED. It is relatively simple and so much more delicious than store bought because it is made from REAL ingredients😋 you can seriously taste the difference!

You can roll out the dough as thin as a tortilla or as thick as a flatbread/pita depending on what you are making them for! I love to make them a little bit thicker and use them as wraps😍

Flax Flatbread Wrap
•1 cup finely ground flax seeds
•1 cup flour + more for rolling the dough
•1 cup hot water
•1/8 tsp salt
•2 tsp nutritional yeast
•1/2 tsp garlic powder

In a large mixing bowl, combine the ingredients into a dough. Cut the dough into 8 even portions. Sprinkle additional flour onto the counter, flatten out 1 portion of the dough, and sprinkle more on top of the dough. Roll out with a rolling pin until it is as thin as a tortilla or flatbread. Sprinkle more flour on as necessary. Once rolled out, you can cut the dough into a round shape, but I do not mind the irregular shape. Heat up a skillet on medium-low heat (closer to low heat). Spray with non-stick spray and lay the tortilla on the skillet. For thicker tortillas, cook each side for about 1 minute, or until just turning golden brown. For the thinner tortillas, cook each side for approximately 30 seconds. (If you cook it too long, the thin tortilla will harden up and not be flexible). These will keep for about 4-5 days in the refrigerator, and simply reheat them up on a skillet for 15 seconds on each side. I am also freezing some to see how they turn out!
