HUDSON VALLEY CHEFS CELEBRATE JACQUES 90/90. 90 Events around the country for 90 years of life.

One year ago today, Hudson Valley Chefs Celebrate Jacques brought this incredible group together in Beacon to celebrate Jacques Pépin, food, friendship, and the power of our culinary community.

Looking at this photo brings back so many memories. So many talented chefs, cooks, friends, partners, and supporters all in one room, coming together for something bigger than any one of us.

I’m still incredibly proud of what we created that night and grateful to everyone who showed up, cooked, supported, laughed, and celebrated with us.

A very special thank you to VerTerra Dinnerware, Industrial Arts Brewing Company, Saratoga Water, Joe Jurgielewicz & Son for providing the TASTY DUCK, and Hudson Valley Foie Gras for the incredible foie gras. Your support helped make the evening what it was. 💪🏽❤️

One year later, the community and the memories are still just as strong.

Every time I have the privilege of cooking with the students at Emma’s Torch in NYC, I leave more inspired than when I arrived. I’ve always believed that food is the great equaliser — once we step into a kitchen and gather around a table, our differences fade and what matters is what we can create together. Seeing these students work as a team, build confidence, develop their craft, and take pride in what they put on the plate is something special. I may arrive as the guest chef, but I always leave having learned something from them. This is what I love about food: it connects us, gives us a shared language, and has the power to open doors. A heartfelt thank you to Poughkeepsie Farm Project, Glynwood Farm Farm Green Valley Onion for providing such beautiful, fresh vegetables for the students to play with, learn from, and turn into something delicious. Grateful to everyone who helps make moments like this possible. Looking forward to a class trip up to the Hudson Valley to show them my world 💪🏽🙏🏽❤️

What do you do when something you’ve worked toward suddenly falls apart?

Chason Forehand doesn’t pretend it’s easy.

His advice is to surround yourself with people who pour into you, lean on others when you stumble, allow yourself to move through the emotions, and keep putting one foot in front of the other.

Five years. Ten years. Thirty years.

Chason Forehand says one of the dangers in long-term recovery is starting to believe, “I’m good now.”

Support systems still matter. Awareness still matters. Connection still matters.

As Chason puts it:

“The work doesn’t stop. The work never stops.”

Chason Forehand walked back into the restaurant knowing he had probably lost his job.

He had disappeared for three days and missed the three busiest shifts of the week.

Instead of firing him, his chef told him something that would help change the course of Chason’s life.

Sometimes a second chance really can change everything.

Even after 30 years in recovery, Chason Forehand knew he couldn’t take it for granted.

When plans for the first U.S. Transformation Kitchen suddenly fell apart, the disappointment hit hard enough that he knew exactly where he needed to go: back to his recovery support system.

A powerful reminder that time doesn’t make us immune to life’s challenges…and asking for support is still part of the work.

Living in the Hudson Valley is pretty incredible. The diversity of the land—and the soil—never ceases to amaze me.

I took a ride out to @greenvalleyonion, in the heart of New York State’s Black Dirt Region, with a slightly crazy idea inspired by @nichloasleiss.

The Black Dirt Region, centered in southern Orange County, is known for its incredibly rich, dark soil—some of the most distinctive farmland in New York State. The soil was formed over thousands of years from decomposed plant material in what was once a glacial lake and wetland. Deep, fertile, and full of organic matter, it has become especially famous for producing onions and other vegetables.

The folks at Green Valley Onion generously gave me some beautiful yellow and red onions, along with a bucket of that prized black soil. Then I baked the onions directly in the earth they were grown in, using my beautiful tagine from @Newburghpottery.

There’s something special about cooking an ingredient in the soil that produced it. A little taste of place, in the most literal sense. We’ll also be celebrating the incredible onions of the Black Dirt Region at the upcoming Poughkeepsie Farm Project Summer Soirée.

On the menu:

🧅 Roasted Cry Baby onions with Giusti aged balsamic
🧅 Black Dirt onion dip made with Hudson Valley Fresh sour cream
🧅 Pickled red onions
🧅 Red onion jam with artisan sourdough

A few different expressions of one humble ingredient—and a chance to highlight the farms, soil, and people that make this region so special. #onions #blackdirtregion #nofarmsnofood #nyfarmers

One of the things I’m pretty passionate about is reducing food waste and finding creative ways to rescue ingredients that might otherwise be thrown away.

As we roll into the height of the growing season here in the Hudson Valley, the amount of donated food coming in from local farms and supermarkets can sometimes be overwhelming—in the best possible way.

These perfectly good strawberries were destined for the bin. Instead, I put my Waring 10-tray dehydrator to work and turned them into these beautiful dried berries.

Next weekend, they’ll find a new life on our local cheese board at the Poughkeepsie Farm Project Summer Soirée.

A small example of what I love about cooking: taking something that could have been wasted and turning it into something worth celebrating. Thank you @fareground looking forward to your support for our @poughkeepsiefarmproject Summer Soiree Always inspiring to see what Jamie and the team at Fareground do to support the community 💪🏽🙏🏽❤️
