@ukblackchefsnetwork were invited to “Delicious Delights” 🥐🍰✨

An autumn/winter product showcase by @delice_de_france , in collaboration with @the_chefs_forum and WLC.

Location: @idalia.restaurant

An afternoon of high tea, canapés, croissants, cakes and plenty of delicious treats… and delicious it certainly was! 👌🏾☺️

I was genuinely surprised by just how extensive their catalogue was. So much more on offer than I expected, and the quality? 👌🏾🔥

As a chef, I’m always interested in discovering suppliers, exploring products and building new industry connections.

Délice de France is definitely a supplier I’d love to connect with and learn more about.

Thank you for the invitation and hospitality! 🖤

🇯🇲🇬🇭🇹🇹 A little Caribbean history on a plate! 🌍🔥

Saltfish Croquette | Ackee Purée | Pineapple Chow

👨🏾‍🍳 @chef_oishii_garcea
📸 @ms_haze_ldn

Three elements, three stories, and a whole lot of Caribbean flavour! 👩🏾‍🍳🙌🏾

Let’s talk about ACKEE & SALTFISH 🇯🇲

Did you know that ackee isn’t originally from Jamaica? Its roots are in West Africa, particularly Ghana, where it’s known as ankye. Ackee was brought to Jamaica during the transatlantic slave trade and eventually became the country’s national fruit.

And then there’s SALTFISH! 🐟

Salted cod has its own history. Much of the cod consumed in the Caribbean historically came from the cold waters of the North Atlantic, particularly Newfoundland and the Canadian fishing grounds.

Saltfish became a staple during colonial times, when preserved fish was shipped to Caribbean plantations as an inexpensive source of protein for enslaved Africans.

Over time, Jamaicans transformed these ingredients into something extraordinary — ackee and saltfish, Jamaica’s national dish. 🇯🇲💛

A dish born from a complicated history, but shaped by the creativity, resilience and culinary knowledge of the people who made it their own.

Now let’s talk PINEAPPLE CHOW! 🍍🇹🇹

Chow is a popular Trinidadian snack, made with fresh fruit tossed in lime juice, salt, pepper, garlic and often shado beni (culantro).

It’s fresh, tangy, spicy and full of flavour!

Pineapple chow brings acidity, sweetness and heat, cutting beautifully through the richness of the saltfish croquette and creamy ackee purée.

West African roots, Jamaican heritage, Trinidadian influence… all coming together on one plate. 🌍🔥

This is what Caribbean cooking is about for me. Understanding where our ingredients come from, respecting the history and finding creative ways to tell those stories through food.

Our food is more than just food. It’s history, heritage, migration, survival and culture. 💛

🇬🇾🇹🇹 When a Guyanese and a Trini link up… you get QUADRUPLES and great photography! ☺️🙌🏾😂📸

Two nations, one Caribbean connection, and a whole lot of flavour! 🔥

My Taster Menu — Mini Doubles, Caribbean style!

Let’s talk about DOUBLES! 🇹🇹

A Trinidadian street food staple with roots in the Indo-Caribbean community, doubles are made with bara — soft, fluffy, fried flatbreads traditionally served in pairs, filled with curried channa (chickpeas) and finished with chutneys and pepper sauce.

The dish grew out of Trinidad’s Indian culinary heritage, shaped by the descendants of indentured labourers who brought their food traditions to the Caribbean. What started as humble street food became one of Trinidad & Tobago’s most iconic dishes.

And here’s where the Guyanese connection comes in! 🇬🇾

Guyana and Trinidad share so much culinary history, from Indian influences and indentureship to our love of channa, bara, roti, pepper and bold Caribbean flavours.

Different countries and shores, shared roots, with our own unique twists. 💛

So when a Trini chef and a Guyanese creative link up, we don’t just make doubles… we make QUADRUPLES! 😂🙌🏾

Four little bites of Caribbean history, culture and creativity on one plate.

This is what I love about Caribbean food. Every dish has a story, and every collaboration brings our cultures a little closer.

Be Inclusive Hospitality Awards ‘26 - the after party -

@ukblackchefsnetwork had the honour of being a judge for these awards 💛

Such a talent pool of nominations this year. It was hard to get them down to finalists.

Working 6 days a week doesn’t leave you much time to network or to keep up with with the world. The Hospitality industry is hard work. Late finishes early starts.

But when you’re determined, you get there in the end. We may have missed the beginning but we definitely saw the end 💛🫶🏾 @eronmibo , @rickz_pics , @chef_idris1010

All work and no play makes Jaquan a dull yout … or summink like that 🤷🏾‍♀️ 😉 Hospitality workers are the best ravers 🙌🏾 #CheLife

Congratulations to all the winners. My job was done months ago … judging 💛🫶🏾 you are all well deserving of these awards
