@chefkwill brought The Proppa Suppa to @theanchorspa for an intimate dinner featuring selections inspired by his cookbook, and every course was a full 5 forks from me. 🍴🍴🍴🍴🍴 The menu using spices from @burlapandbarrel: Likkle Ting — Jamaican pumpkin soup Warm Ting — mackerel rundown with toasted hardo bread Cold Ting — chayote & apple salad with ginger vinaigrette and fresh herbs Main Ting — jerk duck breast with sorrel gastrique, long bean, and white yam succotash Sweet Ting — guava cheesecake with ginger snap crust and @unclewaithleys and @tentoonerum ginger glaze The food was incredible, but honestly, the people at the table made the night even better. It felt intimate, intentional, and completely different from a typical night out. And Chef Kwame has already agreed to come back, now we just have to let him know New Haven wants another one. Uncle Waithley was a ginger farmer on St. Vincent. He lived to a hundred, and he made his own ginger beer. His grandson Karl Franz Williams spent seventeen years running bars and restaurants, and before that worked in brand management and innovation at Pepsi and Procter & Gamble. He took the family ginger beer and put a scotch bonnet in it. That is the whole product at Uncle Waithleys Beverage Company. Peruvian organic ginger, ground and pressed, then aged through a fermentation step for depth. Lime juice, turmeric and mineral water with natural salts to balance the sugar. Then the pepper, which is the part nobody else is doing. Most ginger beer competes on how much ginger it can claim. This one competes on what happens a second after you swallow. A deliberate burn is a filter. It loses the shopper who wanted something easy and it keeps the one who was bored. Your gift will make room for you, instead of spending time jockeying for position invest that time in honing your craft. It’s not just about the food, it’s the people, the intention, the energy that goes into creating a space for people to gather. My mentor used to say everything rises and falls in leadership you can’t lead from the back office with your feet up on the desk barking out orders. Leaders surround themselves with good people, train them and release them to so they can fulfill their purpose. They obsess over the details, it’s always a pleasure watching someone walk in and work in their purpose.
