Ok…hear me out…
I know it’s 92 degrees outside in Texas, but it’s also September and we have had our first wave of viruses/sickness go through our house. This soup is high in vitamin A, C, and high in fiber. Honestly though, I’m just wanting to make some butternut squash soup.

I’m not sure why, but we make so many soups in the fall and this is a healthy favorite.

Butternut squash is about $1.50 each so I grabbed 3. Cut them in half, scooped out the seeds, drizzle w olive oil, salt, pepper, cinnamon and put them in an oven safe dish and fill the dish 1/2 way w water. Cook at 400 for about 30 mins or until you can scoop out all the good stuff easily!! Scoop out all the squash and put it in a food processor along with about a cup of chicken broth. If you like thicker soup maybe less…up to you. Just play around with the texture/thickness you like. That’s it!! I add chopped up kale and sunflower seeds on top because I like a crunchy texture, but you do you!

You can also use this soup base on top of some pasta, Italian sausage, and spinach mixed up or drizzle it on a quinoa bowl. You can even compost the rinds and roast the seeds w some olive oil and salt. The possibility are endless with this one!

Also, isn’t my wildflower wallpaper so beautiful?!? It’s my favorite wall in the house!!

Happy Sept 2nd and please beware bc the viruses are swirling all over right now! You might want to grab some butternut squash next time you go to the store!!

Family photos of Christmas past ❤️

Do you ever go through photos to see how your family (and you) have changed through the years? It is such a sweet reminder of how God has answered prayers and provided through the tough times. I know it’s been a rough year, but this too shall pass and we will look back years from now to see how God carried us through.
