Here’s another no recipe recipe. I’ve just provided eyeballed amounts. It makes a huge quantity as you can see but the whole idea is to liberate you from looking at words and using your palate!

Update: Thank u to all the nice Polish ppl who have kindly pointed out I’ve unintentionally Poh-lished this salad and that it’s neither Salatka z selera nor Salatka jarzynowa but a hybrid of the 2🙏💕😅.

Feeds up to 12 as a side and 8 as girl dinner mains 😚💕

POLISH STYLE CELERIAC SALAD

1 celeriac, peeled, coursely grated
2 medium carrots, peeled, coursely grated (maybe only 1 if you’re using the apple)
1 - 2 sticks celery, diced or sliced
1 cup diced boiled potato
4 - 6 eggs
3/4-1 cup Polski ogorki (dill pickle)
1 medium any coloured onion, peeled, finely diced
1-2 cup of chopped parsley
About 1 1/2 cups whole egg mayonnaise
1/3 cup sour cream or Greek style yoghurt
Salt & freshly ground black pepper
Juice of 1 lemon (not traditional but I added some zest)
Traditionally a grated green apple and cooled, cooked peas are part of Team Salatka but I didn’t have either today.

Mix together and adjust as you wish. I wound up adding more celery for additional crunch and more pickles for more zing. Side note - use the pickle juice if you don’t have lemons. I also found a couple of sad spring onions in the veg crisper so bunged those in as well. The main thing is you want it all to bind into a lovely creamy mess. You can have this as an accompaniment but I love having it as a light meal and often dot it with pickled herring or anchovies which are a flavour dream team! Girl dinner deployed 🎀🚀.
