Chef Diego Garcia’s Scallops served over delicata squash mole amarillo (a traditional Mexican yellow mole), alongside a squash blossom stuffed with requesón (a soft, fresh Mexican cheese) and epazote, a fragrant Mexican herb. Finished with a petite habanero and guava salad.

Chef Diego Garcia’s fresh take on aguachile. Spanish mackerel paired with xoconostle (sour prickly pear) aguachile, xoconostle cheong, avocado, watermelon radish, and pápalo. Loving the colors on this dish!

ASSEMBLED IN MINUTES. PUT STRAIGHT TO WORK. 🔥

Building my dream restaurant, Black Lamb Chef Table, means putting thought into every detail—from the dining room to the equipment working behind the scenes.

I partnered with Metro Foodservice to help bring that dream to life.

This shelving is a perfect example of why. I assembled it in minutes, put it straight into use, and then used the same unit as a heavy-duty cart to move supplies exactly where I needed them.

Build it. Load it. Roll it. Keep moving.

Practical versatility that helps me get the work done—and keep building the restaurant I’ve always envisioned.

Two years ago, Ali was nothing more than flour, water, patience—and a little obsession.

Today, our two-year-old sourdough starter has become a local celebrity. And every star deserves the Hollywood treatment.

Meet Ali’s new green room: our Metro C5 3 Series.

Precision proofing. Controlled fermentation. Consistency from one batch to the next. Because at Black Lamb Chef Table, bread is never an afterthought—it is part of the experience.

But Ali is only the beginning.

The equipment behind the food matters.

During our 12-course tasting menu, the Metro C5 becomes our hot-holding command center—holding hot components at the proper temperature, protecting quality, keeping every course organized and ensuring everything is ready for the exact moment it is called.

In a 12-course experience, timing is everything.

The Metro C5 3 Series is part of the daily rhythm of our kitchen, moving seamlessly from fermentation and proofing into the demands of service.

Reliable equipment does not need to be complicated. It simply needs to perform when the kitchen does.

Proud to put Metro Foodservice equipment to work every day—and grateful to give our local celebrity the trailer it deserves.

The star has arrived.

Will you be at the table?

A lot happening on one plate, and it all comes together beautifully. Chef Clayton Parrett’s triptych brings together harvest carrot curry, spinach, cherry pepper with smoked Gouda, and antelope croquettes. Bold flavors and great color.

Some moments remind you why you started.

Standing on that stage, cooking against the clock with judges watching, there wasn’t anywhere to hide.

Just preparation, instinct, technique, and the dish in front of me.

For the Rapid Fire Challenge at the California Restaurant Show, I created Ember and Orchard — pan-seared duck breast, cherry, charred corn purée, mole reduction, charred green onions, and a dish built around my story as a chef.

And we walked away with the win.

I’m proud of the result.

But what excites me even more is knowing there’s another level.

Next year, I’m coming back better.

Every dish has a story to tell. This one became part of mine.

Thank you to the @californiarestaurantshow , @unox.usa, and Walk-In Talk Media for giving chefs a stage to compete, create, and show what we can do.

So incredibly blessed for opportunities like this! ❤️🇺🇸🍽️

Thank you, @wheatley1323, for bringing me along to such an unforgettable dinner event. Getting to represent RAK Porcelain USA as a proud sponsor of Team USA on their journey to the Culinary Olympics is an absolute honor—and an opportunity I will never take for granted.

I’m so grateful to Chef Renee for giving me a CIGY6 pin. Then, just when I thought the night couldn’t get any better, I rounded the corner and found @walkintalkshow doing what they do best! 🎙️

Thank you, Team USA, for an incredible evening. You could truly taste the passion, talent, and dedication in every single bite.

Seriously, this is the stuff dreams are made of. What an honor to witness it all—it was inspiring beyond words! 🇺🇸✨
