POSTS STORIES REELS TAGGED
Not many people get to see what it takes to represent the United States on the world stage. We were invited inside.

The hours are long. The expectations are high. And the work that goes into getting there is something most people will never see.

We had the privilege of spending time with ACF Culinary Team USA in Pittsburgh, documenting a small piece of that journey.

I’ve spent my life in this industry, and I can tell you, being trusted to tell these stories means a great deal to me and everyone at Walk-In Talk Media.

These are our people. This is their story. And we’re honored to help tell it.

Some events remind you why hospitality is unlike any other industry. This was an amazing experience -

We had the privilege of traveling to New Orleans to capture Bocuse d’Or Americas, held during the Louisiana Restaurant Association Show—going behind the scenes of one of the world’s most prestigious culinary competitions.

Throughout the week, we met and interviewed some of the biggest names in our industry, including Emeril Lagasse, Daniel Boulud, E.J. Lagasse, and many of the chefs, mentors, judges, and leaders dedicated to advancing the culinary profession. Their passion, humility, and commitment to excellence are what make events like this so special.

A heartfelt thank you to everyone who welcomed Walk-In Talk Media and helped make this experience possible, especially New Orleans & Company, Marybeth Romig, Alice Franz Glenn, Mark Romig, Bragard , Chef Works, LOVE NOLA TV, Kal Landry, Jordan Fontenot, Glenn Haggerty, Keith Haggerty, Testo Saveris - North America, Aaron Sharpe, Eric Moore, Nicholas Barrington CEC ACE, Bocuse d’Or, and the Louisiana Restaurant Association.

We’re grateful for the access, the conversations, and the opportunity to help tell the stories of the people elevating hospitality every day.

From the industry, for the industry.

Watch Walk-In Talk Media’s debut short documentary, Gulf Shrimp Tagliatelle, officially selected by the Central Florida Film event and receiving an Honorable Mention at the Folkestone Film Festival.

This visual love letter follows Chef Thomas Parker across Central Florida, from the Tampa docks to local farms and markets, celebrating the farmers, fishermen, and chefs who bring food to life from source to plate.

The film culminates in a seasonal Gulf Shrimp Tagliatelle, crafted with scratch-made pasta, Florida Gulf shrimp, and ingredients rooted in place, purpose, and craft.

Told through on-location interviews, hands-on cooking, and thoughtful narration, this short documentary honors Florida’s bounty and the people behind it.

Chef Diego Garcia’s Scallops served over delicata squash mole amarillo (a traditional Mexican yellow mole), alongside a squash blossom stuffed with requesón (a soft, fresh Mexican cheese) and epazote, a fragrant Mexican herb. Finished with a petite habanero and guava salad.

50 years of history. One story worth telling.

Production continues on our upcoming documentary film exploring the legacy of Lam’s Garden, a Chinese restaurant that has been part of Orlando’s culinary landscape for five decades.

At the center of the story is Chef Kwong Mai, whose perspective on Chinese-American cuisine, tradition, and the changing American palate is helping shape the film.

From the familiar dishes that generations of customers have grown up with to an expanding menu featuring fresh seafood, we’re documenting how a restaurant honors its past while continuing to evolve.

But this story goes well beyond the kitchen.

It’s about the people, the memories, the families, and the community that have made Lam’s Garden what it is today.

Over multiple production days, our team is capturing the conversations, culinary traditions, and everyday moments that will bring this story to life.

A Walk-In Talk Media documentary production.

More to come.

🏆 BEST OF THE BAY 2026 — VOTED BEST PODCAST!

This one means a little more.

Walk-In Talk has grown into a podcast with a national and international audience, reaching people well beyond where we started. But to be recognized here at home, in Tampa Bay, among the people and the community that have been part of our journey, makes this award especially meaningful.

What started as an idea has grown into something much bigger than I ever imagined. And none of it happens without the people who have helped build it along the way.

Thank you to Creative Loafing, everyone who took the time to vote, our incredible partners, John, Pooch, and our extended family of chefs and guests who have shared their time, talent, and stories with us.

There have been a lot of long days, countless hours of work, and some incredible moments along the way. To see Walk-In Talk recognized in our own backyard is something I’m genuinely proud of.

We’ve been fortunate to receive recognition beyond Tampa Bay, but there’s something different about being recognized by your own community. These are our people, and this is home.

This award belongs to everyone who has helped make Walk-In Talk what it is today.

We have a lot more stories to tell, and we’re nowhere near finished - we’re able to continue this in part by our amazing partners:

Chef Diego Garcia’s story is one of survival, identity and finding a way forward.

At 15, he was sleeping in the New York City subway. The kitchen became his way out. Years later, the lessons of those early restaurants, his Mexican roots and the traditions passed down through his family continue to shape the chef, father and business owner he is today.

This is a story about much more than food.

Chef Diego Garcia’s connection to food began long before he entered a professional kitchen.

After his father was deported from New York, his family returned to Mexico, where Diego learned a tradition passed from his grandfather to his father: butchering goats and preparing barbacoa for the mercado.

Today, that history continues to shape the way he cooks.

For this dish, Diego pairs Spanish mackerel with a bright, fruit-forward xoconostle aguachile, watermelon radish, avocado, pápalo and marigolds. Fatty fish meets acidity, freshness and ingredients deeply connected to Mexican cuisine.

“My father passed it down to me, and now I carry that with me.”

At 15, Chef Diego Garcia was sleeping in the New York City subway.

The kitchen gave him another direction.

French restaurants, farmers markets, mentors and a growing obsession with ingredients became more than a career. They became a way forward.

Today, Diego brings those experiences together with his Mexican roots as chef and owner of Cote and Flame Private Events & Catering in Tampa.

“The kitchen really did save me.”

From the industry. For the industry.

Special thanks to Richard Starke and Olivia Ward from Halperns’ Steak & Seafood Orlando for supplying the #Scallops for this dish!
