Chappett’s Café is the food James and Sandia cook at home, almost exclusively South East Asian.

Imagine being mentored by @watermelonchang! She’s part of our 2027 mentor cohort, and if wine is what you want to build a career around, she is exactly who you want in your corner. Sandia co-founded a two Michelin-starred restaurant and curates the largest range of grower Champagne in the country, most of which she chooses by walking the vineyards herself.

You do not need to be the most experienced person in the room. If you are the one who tastes on your day off, who follows producers rather than labels, and who cannot walk past a wine list without reading it properly, six months with Sandia is where that turns into a stellar career rather than a constant habit.

Some restaurants serve dinner.

At Kitchen Table in London, dinner becomes an experience.

Seated around the kitchen itself, there is nowhere to hide - and no reason to. Every dish unfolds directly in front of you, with James Knappett and his team turning exceptional British ingredients into something quietly extraordinary.

There is a remarkable precision to his cooking. Every element feels considered, every technique purposeful, yet nothing ever feels forced. It is craftsmanship at its highest level - confident, restrained, and deeply personal.

And then there is the wine.

Curated by his wife, the brilliant sommelière Sandia Chang, Kitchen Table has developed an exceptional expertise in Grower Champagne. Her selection brings a remarkable sense of place and individuality to the pairing - bottles chosen not simply for prestige, but for character, depth and expression.

It is this balance that makes Kitchen Table so special - Knappett’s precision and craftsmanship on one side, Chang’s extraordinary understanding of wine on the other.

Two Michelin stars, certainly. But more importantly, a restaurant with its own identity - deeply British, intensely personal, and utterly compelling.

Kitchen Table is a place where the kitchen truly is the table.

Part 2/3
I’ve always been someone who enjoys a glass of Champagne as an aperitif, but sitting through an entire tasting menu paired exclusively with Champagne? I wasn’t convinced it would be for me.

Back in May, @kitchentable1 Kitchen Table hosted a truly special one-off dinner in collaboration with YouTube restaurant reviewer Sándor Varga aka @alexandertheguest , with James Knappett and Sandia @watermelonchang curating a menu where every course was paired with a different Champagne. It completely changed my perspective.

From iconic names like Krug to outstanding smaller grower-producers including Eric Rodez, Georges Laval, J.L. Vergnon and Olivier Horiot, every pour had been carefully selected to complement the food rather than dominate it. The pairings were thoughtful, precise and, more often than not, genuinely surprising. By the end of the evening I realised just how versatile great Champagne can be when it’s in the right hands.

The menu itself was classic James Knappett: deceptively simple on paper but packed with refinement and flavour. One course in particular stood out. Instead of the expected beef or lamb centrepiece, the main protein was chicken—an inspired decision that felt refreshing in a fine dining setting. James explained it was his tribute to a memorable meal of chicken and chips served during a visit to one of Champagne’s most famous houses, proving that inspiration doesn’t always come from luxury ingredients but from unforgettable experiences.

It was one of those evenings where the food, wine and stories all came together seamlessly, helped enormously by the warmth and knowledge of James and Sandia throughout the dinner. I arrived expecting to admire the cooking; I left with an entirely new appreciation for Champagne as a dining companion.

Chef’s counter dining at its absolute finest. Every single course was a masterpiece — creative, balanced, and packed with flavour. Here’s what I devoured:

OYSTER – horseradish, sour cream, Meyer lemon, pea & broad bean
OCTOPUS – ponzu, chilli, peppers & jalapeño
CHICKEN – rosemary, mascarpone, bacon, tagete & liver parfait
MELON – cucumber, grape & apple marigold
TROUT – gooseberry, green strawberry & elderflower
PARKERHOUSE – crème fraîche, onion, wild garlic & chive
CAVIAR – scallop, roc, white asparagus, Champagne & butterfly sorrel
LANGOUSTINE – Goan curry, egg, coriander, mango & peanut
ANGOLOTTI – goat’s curd, tomato & black garlic
LAMB – sausage, rose, yoghurt, mint, pea & black olives
ST JUDE CURD – apricot, soda bread & thyme
STRAWBERRY – pine & pineapple weed
CHERRY – green almond & fig leaf
CANELÉ – Seville orange
MEDLAR – black pepper

Paired with the most incredible bottle of pear cider from Eric Bordelet — crisp, elegant, and the perfect match for this tasting menu. Every sip and every bite felt special.

If you love intimate, high-end counter dining where the chefs take you on a journey, Kitchen Table is an absolute must. Thank you @jknappett and @watermelonchang and the whole team 💕
