โ€œPotatoes are very interesting folks. I think they see a lot of what is going on in the earth - they have so many eyes.โ€ ๐Ÿคฃ Seriously thoughโ€ฆ Birria Baked Potatoes for Thanksgiving this week. Recipe โคต๏ธ @g_bque * Season a chuck roast and short ribs heavily with salt * Sear in a Dutch oven over high to get a crust on all sides and then remove * Sauteฬ 1 onion until it becomes translucent and then add in 5 cloves of garlic and 1 can chipotle in adobo and cook for 2 minutes * Add in 28oz diced tomatoes, 1 quart of beef broth, 1 quart of water, and then 3 guajillo peppers, 5 arbol chilis, 3 ancho chilis * Season with 1 tsp of paprika, cloves, coriander, oregano, 2 cinnamon sticks, 2 tsp of salt, and 2 bay leaves * Once the chilis are soft, use an immersion blender to blend it till smooth (remove cinnamon and bay leaves) * Add the meat to the liquid and cook for 4-5 hours or until falls apart tender * I added 1 quart of beef broth and 2-3 cups of water throughout the cooking process so that the liquid covers the meat * Once your beef is done, shred it finely and itโ€™s time to serve * To a baked potato, add butter, birria meat, queso, cilantro, and onions.
