🔥 WILD GAME WEDNESDAY 🔥

HERE COMES THE ROOOOOOSTER!

This week, Lance Lewis shows us how to turn fresh-harvested pheasant into crispy, golden schnitzel served over buttery spätzle and topped with rich mushroom gravy. Finished with fresh parsley and a squeeze of lemon, this is wild game comfort food at its finest. There’s nothing better than bringing the harvest from the field straight to the table.

"OLIVE OIL" is quite possibly the most misused term in cooking. 💯

I see it all the time where someone is telling you to use "olive oil" to sear a steak and they themselves or those who misinterpret it, use EXTRA VIRGIN OLIVE OIL. 🤯

At so many of my private events, the majority of patrons are dumbfounded to learn there is not only a different in olive oils, but that extra virgin isnt the better option in most cases.

"All the fancy TV chefs use it, so thats what I use"

The name lends itself to appear the best quality, and it most certainly is in the right application/cooking method.

Admittedly, I used to misuse EVOO as well until I learned the differences of the varieties of Olive Oil (Regular, light, light virgin, extra virgin, amongst others I'm sure).

This simple trick of making the switch to plain Olive Oil will dramatically effect your cooking. Taste, texture, and so much more. 💯

To be clear, I use EVOO all the time! Just not for high temp sautéeing, searing, frying, etc. 🫡

I'll be posting a couple more simple tips for elevating your cooking in the kitchen. Stay tuned!

Homemade gnocchi and wild turkey meatballs with basil pesto. Most everything in this meal was either grown or harvested/hunted by us.

We used my good friend Jeff's @wildgameandfish recipe for the meatballs. If you are a hunter or angler, you need to check Jeff's recipes out!
