Sunday gratitude ๐Ÿง˜ โ€ข Every Sunday that comes around, I try to reflect on my week, specifically on the people and events that brought me peace and joy. โญ๏ธFALAFEL WRAP (vegan, gf)๐ŸŒฏ โ€ข This summer has gone by so quickly, i forgot to take inventory of my health. Iโ€™m happy to say that Iโ€™ve started getting into a good sleep routine, where Iโ€™m going to bed before midnight and waking up early everyday. Iโ€™ve also started to eat more mindfully during the day and remembering to eat my fruit(always a struggle for me). Iโ€™m still trying to manage my nighttime mindless snacking, but Iโ€™m hoping to use these next couple months to work on that. โ€ข I like to use grocery shopping as a practice run for mindfulness. I went on a Trader Joeโ€™s run and bought things that would make me feel healthy and satisfied. Today I decided to make something made exclusively with @traderjoes items and it came together beautifully. Itโ€™s vegan, gluten free and high in nutrients, perfect for an on-the go lunch or snack. โ€ข โญ๏ธโญ๏ธDEATSโญ๏ธโญ๏ธ -1 gf wrap(this one was made of quinoa) -1 serving of dill falafels -spinach and bell pepper -2 tbs cashew yogurt -1/2 tsp dill/herb seasoning Bake the falafels in an oven until crispy. Meanwhile, make the โ€œtzatzikiโ€ sauce by combining yogurt with seasoning and heat the wrap up on a stove top. Once heated, assemble the veggies, tzatziki and falafels and wrap it all up. Enjoy!
