Goodbye, Atomix.

Some people may think I was the one who told you to quit.

But after ten years in the Michelin world, I’ve seen how much your health has been sacrificed along the way. As your career grew, so did the years, and we’ve learned that none of our achievements matter if we don’t have our health.

These days, our biggest goal is simple:
to stay healthy, be happy, and grow old together.

Leaving Atomix doesn’t mean we’re leaving the Michelin life behind.
It means we’re choosing a new path — a new challenge in food, a new chapter, and a healthier life together.

Our Summer is not done with food.
She is simply beginning again.

I want to say this to my wife, who had the courage to make one of the hardest decisions of her career:

You’ve worked so hard.
I’m so proud of you.
You did so well.

Thank you for giving so much of yourself to your craft for all these years.

And now, it’s time to choose yourself, too.

I’ll always be here, cheering you on through every new beginning and every new journey.

I love you, Summer.
Here’s to whatever comes next.

— Your wife

Dorade with Soy Cherry Agrodolce, Asian Pears, and Scallions

Several months ago, a good friend and I had the pleasure of meeting @wolfin_it_down. His passion for food and cooking was infectious, and our conversations encouraged my friend and I to later host our own dinner in NYC. These experiences contributed to my growing interest in fish butchery and cooking, and I wanted to recreate one of his many delicious seafood dishes.

While several life updates had forced me to temporarily shelf my cooking goals, I recently came upon some dorade at a local fish market. It was the market’s first time having dorade in a long while, and I decided to take this opportunity to attempt a recipe that had previously caught my eye.

In all honesty, I am TERRIBLE at pan-searing fish. I had destroyed so many fillets in the past, and I had never successfully pan-seared an entire fish before. After making several major technical changes (shout-out to @stevenmotocooks great videos), I’m happy to announce that I finally have an intact fish and not a sad chunk of fishmeat.

Overall, the key ingredients provided a very well balanced combination of flavors. The soy cherry agrodolce was fantastic, though I still need to tweak on my approach over multiple iterations. Pairing multiple fruits in a savory dish requires some thought, but the tart, bold cherries complimented the light, crisp pears perfectly. Room for improvement includes improving my cutting techniques and further optimizing the pan sear. I am quite happy with how this turned out, and I look forward to the next time I am back at the fish market.

I’ve been wanting to try something different and experiment with my flash. My friend @wolfin_it_down answered the call and was kind enough to let me photograph him while he cooked.
