The beauty of a simple recipe is how good it is for the amount of effort required to make it. Korean food is always at the forefront of my mind when it comes to the best meal for time spent. Using the hotshot jackpot Mac n cheese by @allgoodles makes that EVEN easier and fun excuse to bend some rules. With just a few bonchon and a fried egg, you have a repeatable late night meal that will be on rotation for me.

LAAB CRUDO//. 👹

This recipe has been living in the back of my mind for some time now. Thankfully with the help of @gastronamour I was about to get the balance right for this one. Laotian food is something I’ve wanted to explore more of and this being their national dish made it feel like the right place to start.

Ingredients:
Shima Aji belly
Fish sauce
Lime leaf
Galangal
Toasted rice powder
Lime juice
MSG
Cilantro
Shallot
Chili
Lovage oil

NIÇOISE-ISH SALAD//. 👹

I always think of the South of France whenever summer shows its face. This salad is a nod to some early food memories of being in Provence during the summers of my childhood. Beautiful, in season produce with a great vinaigrette. I’ve been love struck by the vinegars from @minus8vinegar but any high quality red wine vinegar would do great as well. Be generous with shallots and black pepper. Great tuna and olives will make air break this experience too, so treat yourself ;)

Super light and crisp asparagus with a lovage and Riesling vinegar mayo? Insane. Honestly any herb oil would work great here, so go nuts.

RED SNAPPER AND PEAR AGUACHILE//. 👹

As things warm up, I need some warming but refreshing flavors.

Dry-aged red snapper with a pear aguachile, olive oil and star fruit really make me hopeful that the warmth is coming back someday.

Coconut shrimp is easily one of the most nostalgic recipes for my childhood and I always crave it with warmer weather. This riff using chicken absolutely blew my mind. But really, what’s not to love?

BRANZINO AND DOENJANG BEURRE BLANC//. 👹

I wouldn’t recommend making a beurre blanc after midnight to most people but for me, it was a moment of meditation to slow down and unwind after a long night.
Korean food has been a big inspiration for me recently so I did my best to tastefully incorporate some influence from their cuisine.
