One thing about me, I will turn feeding myself into R&D. 😂

An UnRuly Tasting for One, made at The Lab in Freetown, Sierra Leone.

On the plate: spaghetti with our Roasted Garlic Habanero sauce, coconut milk and prawn heads, Kankanka prawns, blistered spring onions and garlic bread.

It was dinner, yes. But I was also testing how an UnRuly Pantry flavour could travel beyond wings and hold its own in a completely different meal.

That is the work.

UnRuly Kitchen creates the experience.
UnRuly Pantry develops the products.
YAKA builds the systems.
The Lab is where we test.

The wings are the vehicle. The sauces are where the product power lives.

I’m Simché Bailor, Ms Ché, founder of Ché LTD, YAKA and UnRuly Kitchen. I engineer hospitality and build food, brands, spaces and systems from Sierra Leone.

Now be honest. Are you taking the RGH spaghetti or the Kankanka prawns first? 👀

THE RESULTS ARE IN. 🧪🔥

We served it blind. Then we let the data talk.

🔥 RosRos / charcoal took the method test — 9.0/10.
Low charcoal. Fruitwood smoke.

🌶️ Roasted Garlic & Habanero led the finishes — 8.3/10.
And 5/8 called it the most “UnRuly.”

👀 Smokey Kankanka became the contender — 7.9/10.

But the interesting part wasn’t just what won.

It was what the results made us try next.

Winning method + winning finish = RGH × RosRos.

And if you ordered Wings Wednesday after the Tasting Room… you already tasted the next test.

Tell us how you liked it.

Test → Taste → Record → Improve → Run it again.

This is what The Lab is for.
