The kitchen has a way of making time disappear.

One ticket becomes one hundred. One service becomes another. Before you know it, weeks turn into months and months into years.

The voice in this reel reminded me of something important: if you never look up, you’ll miss the journey.

Every day we step into the kitchen, we go to war together. We push through the pressure, solve problems, celebrate wins, and learn from losses. It’s easy to get caught chasing the next goal, the next promotion, the next menu, the next service.

But moments like these are what it’s really about.

I’m grateful for every cook, dishwasher, prep cook, steward, server, and teammate who’s stood beside me. No chef builds anything alone. The standard we set is a reflection of every person who chooses to show up and give their best.

To my team: thank you. I appreciate every one of you more than you’ll ever know. Let’s keep building, one service at a time.

So I had initially planned to make one large post but my caption was way too big so this will be (1/2) posts for a review of the @blvcksvm x @maisonsun.nyc collab focusing on the people that made the night possible 🙏

Last Saturday I had the incredible opportunity of attending BlvckSvm collab with Maison Sun in Brooklyn, NY. It was my first ever food tasting experience and It blew
expectations out of the window! 8 courses, each standing out from each other and all perfectly balanced and were inspired by songs from the album by @young_bread1126 .
He did an amazing job putting together each course. Each one was unique, incredibly flavorful, beautifully presented, and really did match the songs he drew inspiration from. Songs with a softer/jazzier feel were paired with lighter meals like the mackerel and lobster tartare. Whereas songs with more drums and heavier instrumental were paired with meals that felt richer and layered such as the risotto and striploin.
Our host -Carlos- was also a star of the show. He took great care and pride in his service and was incredibly knowledgeable on the wines, courses, and the history of the ingredients. I’m still very new to the world of wine but I have some new favorites on my radar! The Rieslings (with the mackerel and dessert) were amazing. He really put something special together.
Maison Sun is unlike any other restaurant I’ve been in. The openness and seating arrangement really encouraged conversations and It was so cool to connect with everyone else!
The arrangement also made it incredibly easy to talk with Ben between courses and it was great opportunity to ask questions and get to know him as a person. I’ve been a fan since his first release “Bleach” during Covid so getting to meet, talk, and even get my vinyl signed just elevated the night to a different level. He’s really down to earth, humble, and genuine. Hope to see you back in NYC or Boston!

Last weekend I had the pleasure of taking a seat at the michelinman’s dinner party, an experience that was sensory mastery at its finest. The menu, curated by Maison Sun (@maisonsun.nyc ), unfolded like a crescendo of culture and taste, each dish echoing the mood of tracks on Blvck Svm’s (@blvcksvm ) album “michelinman”. Truly virtuosos of flavor, @dr._gasperi dr._gasperi and @young_bread1126 you deserve another round of applause. The project itself, with its rich lexicon layered over jazzy, subdued instrumentals, deploys the language of fine dining as narrative scaffolding, metaphor, and seasoning, sampling chefs and sly nods to food-centric cinema along the way (NB:“hyogo” (track 8) has been a favorite of mine since 2023, and it was a thrill to see it re-released).

As for the wine - to borrow from Blvck Svm’s immaculate lyricism - I was blessed the sommelier brought pairings such that it’s a wonder I didn’t bring a bottle back to my crib.

Finally, the vibe. It felt like a meeting of diverse minds, more akin to Kyoto teahouses and Tokyo jazz kissaten: intimate spaces where artistry, dialogue, and atmosphere flow together as seamlessly as the music and the meal.

Blvck Svm has taken the symbolic, aspirational, and multilayered dimensions of food and shaped them into what he calls a “tasting menu of an album”. The listening-party-meets-supper-club format is still winding its way stateside, but who knows where it will go next: Europe? Africa? Stay tuned.

This past weekend I partnered with @maisonsun.nyc for the fourth run of my michelinman dinner party series

We didn’t announce the collab + open up reservations until the 14th. By the 16th both nights were fully booked. We sold out two $325-a-seat events on a week’s notice, 2 days after announcing it. I’m still tryna wrap my head around that man

Thank you to @dr._gasperi for having me and Huncho, and for believing in this concept. Means the world that you wanted to make this happen 🫂

Thank you to @young_bread1126 for contouring the album into an unforgettable dinner. The way you reimagined each song and distilled your thoughts into each course is gonna stick with me for a long time. And I might never eat risotto again after the one you made. The tamarind chutney was federal you need to be investigated.

Thank you to @jaronleeross for the stone stimulus, really appreciate you getting me kitted for both nights 🪨
