A squeeze of lemon makes food taste brighter. 🍋 Wine acidity does the same job at the table! 🍷 🟤 Bronze Series · WSET L1 · Food & Wine Pairing 🍋 Why acidity matters High-acid wines refresh the palate after fatty, salty, creamy or rich foods. Like lemon juice, acidity stimulates saliva and helps reduce the lingering sensation of fat. 🍾 4 brilliant acidity pairings 🍗 Champagne + fried food Bubbles and high acidity cut through the oil and fat in fried chicken, fish and chips, or tempura. Crunch meets refreshing fizz! 🦪 Chablis + oysters High acidity cuts through the oysters’ creamy texture, while mineral notes complement their salty, briny character. 🧀 Sauvignon Blanc + goat’s cheese Fresh acidity and herbal flavours complement tangy goat’s cheese, keeping the palate refreshed. 🌶️ Riesling + spicy food Off-dry Riesling’s sweetness balances chilli heat, while its high acidity keeps the pairing fresh rather than heavy. 🥗 When should you choose high acidity? Reach for it with rich, fatty, fried, creamy, salty or tomato-based dishes. ⚠️ The mistake to avoid Pairing a low-acid, full-bodied, oaked wine with an equally rich dish can leave the palate feeling heavy and coated. 💡 L1 Exam tip: 🍋 Acidity cuts through fat and richness. 🥂 Champagne = fried food. 🦪 Chablis = oysters. 🧀 Sauvignon Blanc = goat’s cheese. 🌶️ Off-dry Riesling = spicy food. 📌 Save this — and next time, order Champagne with your chips! 🍟🥂 @winechef @winechefbr @englishwinechef @sergiorussowinechef @chefnico17 @boire.du.vin @chef.ichi.wine @japanese_wine_can @japanesewineclub @japanesewinewithfrancois @alexandrema_com @chrischinesewine @chinesefinewines @chinese_wine @sommelier_wset_ @sommelierindia_winemagazine @sommelierathome @magiccellars @sommeliersassociationofindia @sommelierathome @simonagsommelier @somm.pe @fabioelavigna @sommelier_dteixeira @madam_sommelier @sommeliermike

Every bottle of solera-aged Sherry can contain a tiny trace of wine from decades — sometimes centuries — ago. 🍷⏳ That’s the magic of perpetual blending. 🟡 Gold Series · WSET L3 · Sparkling & Fortified — Sherry Solera 🔄 How the solera works A solera uses stacked barrel tiers called criaderas, with younger wines above and the oldest wines at the bottom. 1️⃣ 🍷 Wine is drawn from the bottom tier (the solera) for bottling. 2️⃣ 🪵 The gap is refilled from the tier above. 3️⃣ 🔄 Each higher tier is replenished in turn. 4️⃣ 🍇 The youngest tier receives new wine from the current vintage. The result? A perpetual blend combining wines from multiple years. ⚖️ Why the one-third limit? Traditionally, no more than one-third is drawn at a time. This helps preserve the blend’s continuity and house style. 🏰 More tiers, greater complexity Soleras may have just 3–4 criaderas or many more. Additional tiers allow gradual blending across generations of wine. 🎯 What does it achieve? Consistency. Tio Pepe Fino and Lustau Oloroso maintain their characteristic styles despite vintage variation. Like NV Champagne blending, the system smooths differences between years — but through continuous fractional blending. 🌸 Biological vs oxidative ageing • Fino & Manzanilla: Aged under flor; careful refreshing helps maintain healthy yeast. • Oloroso: Aged oxidatively, without flor. • Amontillado: Begins under flor, then continues oxidatively. • PX: Typically aged oxidatively. 📅 The exception: vintage Sherry Some Sherries are aged separately from a single harvest rather than through a solera. These can carry a vintage date and bottling date. 💡 L3 Exam tip: 🔄 Solera = fractional blending ⬇️ Draw wine from the oldest, bottom tier 🪵 Refill from criaderas above ⚖️ Maximum one-third traditionally drawn 📅 Standard solera Sherry has no single vintage 🌸 Fino = biological ageing; Oloroso = oxidative ageing 💾 Save this for your Sherry and fortified wine revision! 🍷📚 @pausepourspain @winematters_spain @lovespainwine @wine.by.kari @wineeducation.ch @wineeducationcouncil @portvinsladen_portwinebarn @portwinefest @prt.wine @spanishwineguy @kingwilliam_fortified_wine @good_dog_wines

Spain puts ageing on the label. 🇪🇸🍷 Learn the code, and you’ll understand what’s inside the bottle. ⚪ Silver Series · WSET L2 · Labels, Storage & Service 🏷️ Spain’s classification system 🍇 Vino de Mesa (VdM): Basic table wine, without a specific geographical classification. 📍 Vino de la Tierra (VdlT): Regional wine with flexible production rules, similar to IGT. 🏅 DO — Denominación de Origen: Controlled origin with rules for grapes, production zones and yields. Spain has over 70 DOs. 👑 DOCa — Denominación de Origen Calificada: Spain’s highest classification tier. Only Rioja and Priorat hold this status. 🏰 DO de Pago: Classification for individual, high-quality vineyard estates. ⏳ THE AGEING SYSTEM — KNOW THESE! 🍇 Joven: Little or no significant oak ageing; fresh, fruity and ready to drink. 🪵 Crianza: Minimum 2 years total ageing, including 6 months in oak in many regions. 🍷 Reserva: Minimum 3 years total ageing, including 1 year in oak. 🏆 Gran Reserva: Minimum 5 years total ageing, including 18 months in oak. Usually reserved for exceptional vintages. ⚠️ Oak requirements vary by DO. For example, Ribera del Duero Crianza requires at least 12 months in oak. 🔎 Other useful label terms 📅 Vendimia / Añada = vintage year 🎟️ Consejo Regulador = regional regulatory council 🥂 Cava = traditional-method sparkling wine, made mainly from Macabeo, Parellada and Xarel·lo. 🤍 White Rioja has its own ageing rules, which differ from those for red Rioja. 💡 L2 Exam tip: 📍 DO = controlled origin 👑 DOCa = Rioja + Priorat 🪵 Crianza = 2 years / 6 months oak 🍷 Reserva = 3 years / 1 year oak 🏆 Gran Reserva = 5 years / 18 months oak 📚 Save this Spanish wine label decoder for your WSET L2 revision! 🇪🇸🍷 @spanishwinestories @spanishwinelover @spanishwineguy @bestwinesinspain @spainfoodwine @spainwinebar @winetourismspain @viyuelawinery @winetoursofspain @pepites_de_vin @spain_wine_culture @spainwineonly

Great food and wine pairings aren’t guesswork. 🍷🍽️ Four simple principles explain why certain combinations work. 🟤 Bronze Series · WSET L1 · Food & Wine Pairing ⚖️ 1. Match the weight Light food needs light wine; rich dishes need fuller-bodied wines. Delicate fish can be overwhelmed by a powerful oaked Chardonnay, while beef daube suits a fuller-bodied red. 🍋 2. Acidity cuts through richness High-acid wines refresh the palate after fatty foods. Think crisp Chablis with oysters or Champagne with fried chicken. 🥂 🥩 3. Tannin loves protein Red-wine tannins interact with proteins and fats in red meat, making the wine seem smoother. Cabernet Sauvignon with steak works beautifully; with delicate fish, its tannins may taste harsh. 🌍 4. Regional harmony Local wines and foods often evolved together: 🧀 Sancerre + goat’s cheese 🍝 Barolo + truffle pasta 🦪 Chablis + oysters 🐖 Alsace Riesling + pork 🍰 Bonus rule — sweetness Wine should be at least as sweet as the dessert. A dry wine alongside a sweet dish can taste thin, acidic and bitter. 💡 L1 Exam tip: ⚖️ Match weight 🍋 Acidity balances fat 🥩 Tannin pairs with protein 🌍 Regional matches often work 🍰 Wine sweetness ≥ food sweetness 📚 Save these rules for your next meal — and your WSET L1 exam! 🍷✨ @winechef @winechefbr @winefoodtime @winefoodweirdo @taste_your_wine @winepairtravels @winepairglass @saltandtannins @wine.tannins @tanninsandtruth @tannins_and_toddlers @wine_tannins @wine.gastronomy.cigars @winegastroworld @passion_winegastronomy @wine_gastro @passion_winegastronomy @wine_and_food_onlyfans @wineandfoodpromotion @wineandfooditalia @wineandfood_bystockholm

👯‍♂️The same chalk. The same grapes. A warming climate. England didn’t set out to rival Champagne — but its sparkling wines are gaining global recognition. 🥂🇬🇧 🟡 Gold Series · WSET L3 · Sparkling & Fortified — English Sparkling Wine 🌍 The geological connection — Cretaceous chalk Southern England and Champagne share Cretaceous chalk, a porous, calcium-rich limestone formation. The North and South Downs, Kent, Sussex and Hampshire have similar chalk soils to the Côte des Blancs and Montagne de Reims, supporting drainage and helping produce wines with freshness and precision. 🌡️ The climate — cool and warming Southern England has a marginal, cool climate with significant vintage variation. Gradual warming has improved ripening conditions while allowing grapes to retain the high acidity essential for sparkling wine. 🍇 The three key grapes Chardonnay, Pinot Noir and Pinot Meunier — the same varieties used in Champagne. 🍾 Production method Quality English sparkling wine commonly uses the traditional method: secondary fermentation in bottle followed by lees ageing. English PDO sparkling wine has a minimum lees-ageing requirement of 9 months, compared with 15 months for NV Champagne. 📍 Key regions and producers • Sussex: Ridgeview, Nyetimber, Rathfinny • Kent: Chapel Down, Gusbourne • Hampshire: Hambledon 🏰 Why Champagne houses are investing Taittinger (Domaine Evremond) and Pommery have invested in English vineyards, reflecting the region’s potential for high-quality sparkling wine and its similar chalk terroir. 💡 L3 Exam tip: 🪨 Chalk = geological link to Champagne 🌡️ Cool climate + warming = ripeness with high acidity 🍇 Grapes = Chardonnay, Pinot Noir, Pinot Meunier 🍾 Method = traditional 📍 Regions = Sussex, Kent and Hampshire 🏰 Champagne-house investment = growing commercial recognition @englishwinetasting @englishwineadventures @englishwineescapes @englishwinetastingtours @englishwinefan @michelleknight_englishwinepro @englishwinesandspirits @wineofengland @wearetheuncommon

Italian wine labels aren’t confusing. They’re a code — once you know how to read it. 🍷🇮🇹 ⚪ Silver Series · WSET L2 · Labels, Storage & Service 🏷️ The quality hierarchy 🍇 IGT — Indicazione Geografica Tipica Broad geographical origin with flexible grape and production rules. Some premium Super Tuscans, including Sassicaia and Tignanello, use IGT because their blends fall outside traditional appellation rules. 📍 DOC — Denominazione di Origine Controllata Controlled origin with rules for grape varieties, production zones, yields and ageing. 🏆 DOCG — Denominazione di Origine Controllata e Garantita Strictest tier, with additional controls and government tasting checks. Examples: Barolo, Barbaresco, Brunello di Montalcino and Amarone della Valpolicella. 🔎 Key label terms 🏡 Classico — Wine from the historic heartland of an appellation, e.g. Chianti Classico. ⏳ Riserva — Requires additional ageing; the exact period depends on the appellation. Chianti Classico Riserva: at least 24 months; Barolo Riserva: 62 months total. ⬆️ Superiore — Usually indicates stricter production requirements and/or higher minimum alcohol. 📅 Annata — Vintage or harvest year. 🍾 Imbottigliato all’origine — Bottled at origin by the producer. 🎟️ The DOCG strip The numbered government seal across the bottle’s neck identifies DOCG status. 💡 L2 Exam tip: 🍇 IGT = flexible rules 📍 DOC = controlled origin 🏆 DOCG = stricter controls + tasting checks 🏡 Classico = historic heartland ⏳ Riserva = extra ageing ⬆️ Superiore = higher production requirements and/or minimum alcohol 📚 Save this for your Italian wine study notes. 🇮🇹🍷 @italian_wine_private_label @wine_label_inspiration @italianwinelover @italianwine.gourmet @italian_wines @italianwinepodcast @italianwineatelier @ita_lianwine @italian_wineguy @italianwineatelier @italian_wine_guy @italian_wine_academy_bulgaria @wineeducators

🥸🤩Short answer: yes. Long answer: not as much as glassware companies want you to believe. 🍷 🟤 Bronze Series · WSET L1 · Storage & Service The wine glass is not decoration. Its shape genuinely affects how you experience the wine — how aromas concentrate, how the wine hits your tongue, how temperature is maintained. But you don't need a different glass for every grape variety. You need three. 🤔Why shape matters❓ The bowl of the glass concentrates aromas toward the nose. A wider bowl allows more evaporation surface — more aroma molecules reach you. A narrower, taller bowl directs aromas upward more precisely. The rim width affects where wine lands on your tongue — wide rim = front of tongue (sweetness first), narrower rim = directs wine to the sides and back (more acidity and tannin perception). 👉The three glasses you actually need 1️⃣👉Red wine glass: Wide bowl, large opening. The wide bowl allows full aeration of tannic, complex reds — Cabernet Sauvignon, Shiraz, Nebbiolo open up beautifully in a large glass. The Burgundy glass (even wider, rounder bowl) is specifically designed for Pinot Noir, concentrating delicate aromas. 2️⃣👉White wine glass: Narrower than red, tulip-shaped. Smaller surface area preserves freshness and keeps the wine cooler. Directs wine to the tip of the tongue where sweetness is registered first — appropriate for aromatic whites. 3️⃣👉Sparkling wine flute or tulip: Tall and narrow, preserving bubbles and directing aromas upward. Note: many sommeliers now prefer a wider tulip shape for Champagne over the traditional narrow flute — it allows more aroma complexity to develop. Avoid the coupe/saucer shape — it loses bubbles rapidly. 🌡️🍷Temperature matters more than the glass A perfect glass won't save a wine served at the wrong temperature. Always prioritise temperature over vessel. The one non-negotiable: cleanliness A glass washed with strong detergent and not properly rinsed will ruin the wine. Rinse thoroughly. Never store glasses upside-down in a cupboard that smells of wood — the glass will absorb the odour. @wineglass_py @x.wineglass @streetsommvegas @wineglassbayestate @wine.glass.slipper @through_our_wineglasses

🍷You opened it. You didn't finish it. Now what? 🍷 🟤 *Bronze Series · WSET L1 · Storage & Service* The moment you pull a cork, the clock starts. Oxygen is the enemy — it's what makes wine taste flat, dull, and eventually vinegary. But different wines fade at completely different speeds, and knowing which gives you a fighting chance. 🍷Still red wine — 3 to 5 days 👉Re-cork and refrigerate. The cold slows oxidation dramatically. Take it out 30 minutes before serving to bring it back to temperature. Lighter reds (Pinot Noir) fade faster than full-bodied tannic reds — tannin acts as an antioxidant. 🍷🤍Still white wine and rosé — 3 to 5 days 👉Recork and refrigerate immediately. Crisp whites (Sauvignon Blanc, Pinot Grigio) stay fresh up to 5 days. Richer, oaked whites (Chardonnay) may begin to lose their freshness after 3 days. 🥂Sparkling wine — 1 to 3 days 👉Bubbles escape quickly. A Champagne stopper (not the original cork) keeps the fizz alive for 1–3 days. Without one, the wine goes flat within hours. The wine is still drinkable — it just won't be sparkling. 🍷🧬Fortified wine — weeks to months 👉The added spirit in Port and Sherry acts as a preservative. Ruby Port keeps for 2–4 weeks. Tawny Port (already oxidised during ageing) keeps for weeks. Fino and Manzanilla Sherry are exceptions — extremely delicate, they should be drunk within 1–2 weeks of opening and kept refrigerated. Oloroso and sweeter Sherries last much longer. ⚙️The key tool — wine vacuum pump or inert gas spray 👉Removing oxygen from the bottle (vacuum pump) or replacing it with inert gas (nitrogen or argon spray) dramatically extends life. Not essential but genuinely useful for occasional drinkers. 💡 L1 Exam tip: Still wine = 3–5 days refrigerated. Sparkling = 1–3 days with stopper. Fortified = weeks to months (except Fino Sherry — 1–2 weeks only, refrigerated). Save this. Send it to everyone who leaves wine on the counter. @winebottle @winebottlerecife @winebottlekrafts @winebythebottle2 @wine.bythebottle @wine.bythebottle @laybottle @wine_bottle_experience @winebottleslove @winebottletool @winebottleclub @labelmenicely @umbertoianni_winebottledpoetry @deeswinedesigns

🥂 THE CHAMPAGNE HOUSE ARCHIVE — WHEN A HOUSE BECOMES AN ICON🍾👑 👑🍾An iconic Champagne house isn’t built by a single great bottle. It’s built through decades of decisions. What grapes were planted? Which vineyards were acquired? How were reserve wines preserved? Which vintages were released—or held back? How was the house style protected when the harvest changed? This is where a house archive becomes more than history. Old bottles, reserve wines, cellar records, vineyard knowledge and past cuvées can become a kind of institutional memory—allowing a house to understand how its wines evolve and how its style has been expressed across generations. Then there are the houses that became reference points in Champagne: 🍾 Krug — blending as architecture 🍾 Dom Pérignon — vintage expression and precision 🍾 Louis Roederer — estate viticulture and long-term vision 🍾 Bollinger — Pinot Noir, structure and oxidative richness Their identities aren’t simply marketing stories. They are the accumulated result of vineyards + people + cellar decisions + time. And that’s perhaps the most fascinating thing about Champagne: A house isn’t only selling what’s in the bottle. It is also selling the memory of everything that came before it. Great Champagne isn’t just made. It is built over generations. 🥂 @krugchampagne @domperignon.billionaires @domperignoncollectors @domperignonlovers @domchampagne_ @domperignonamazed @champagne.domperignon.france @dom_perignon_rose_official @krug_champagne @charleskrugwinery @louisroederer_ @louiseroecph @louiseroehome @champagne_bollinger @champagnebollingernl @champagne_bollinger_japan @thechampagnebunnies @yournextpour @vivigodivah_mtl @burgundynick @wineinfluencers

🍾🥂Making Vintage Champagne is about exceptional grapes from an exceptional year. Making NV Champagne is about something harder: consistency. 🥂🎯 🟡 Gold Series · WSET L3 · Sparkling & Fortified — NV Champagne Blending NV Champagne must maintain the house style despite major vintage variation. That requires careful blending, not simply combining grapes. 🧩🍇 🍷 Vin clair — current vintage Still wine from the current harvest, typically 60–75% of the blend. Its character changes every year with growing conditions. 🛢️ Vins de réserve — reserve wines Wines from previous vintages, stored for future blending. They provide consistency, complexity and the house’s signature style. Why reserves matter 🔄 A difficult year may produce thin, acidic or unbalanced base wines. Reserve wines help correct this. In an exceptional year, they prevent the vintage from overpowering the house style. Some houses maintain reserve libraries spanning many years; Krug’s Grande Cuvée, for example, uses reserve wines from multiple vintages. 👨‍🍳 The chef de cave The cellar master: 1️⃣ Tastes wines by village, grape and parcel 2️⃣ Evaluates the reserve library 3️⃣ Creates proportions to reproduce the house style 4️⃣ Adjusts for the current vintage without losing consistency The challenge? The final blend must still work after extended lees ageing. ⏳🥂 ⏱️ Minimum lees ageing NV Champagne: 15 months Vintage Champagne: 36 months Prestige cuvées often exceed these minimums significantly. 🔑 L3 Exam tip: NV = current vin clair (60–75%) + reserve wines. Reserve wines = consistency + complexity + house style. Chef de cave = manages the blend. NV minimum lees ageing = 15 months. 💾 Save this for your Champagne study notes. @yournextpour @vivigodivah_mtl @burgundynick @neprithe @champagnenorway @champagne_officiel @interestinggurl_luvs_champagne @champagne_billecart_salmon @bollcie @champagnehedonist @champagne_everything @champagne.favet @champagnespecialist_mai @champagne_maisonperla @celine.champagne.pcbi @champagneamisdebeauregard @serouxeroyalee @mademoiselle.champagne @vivalavino_nyc @vinfatuation @vivalavino_winefest
