In a city full of izakayas, it’s easy for the nights to blur: the same skewers, the same sauces, the same familiar rhythm.

Daikoku Japanese Izakaya at Kada Maxwell sets out to change that, anchored by a Japanese chef w over two decades of yakitori craft.

At its heart is something Singapore has never seen before: Miso Tare Yakitori.

Unlike the familiar soy-based glaze, Daikoku’s skewers are brushed w two distinct miso — the bold depth of renowned Sendai miso & the gentle sweetness of Saikyō, a Kyoto-born white miso, a pairing rare even in Japan.

Grilled over charcoal, the result is a flavour recognisable in form, yet singular in character, anchoring a menu where yakitori leads but kushiyaki (vegetables & other meats) also has its place.

In true izakaya culture, the first toast comes before the food — a way of setting the rhythm of the night.

Daikoku embraces this tradition, making the opening sip not just a formality, but a moment that frames the meal.

At Daikoku, an evening isn’t rushed, it unfolds.
A first drink before the food.
Skewers turned patiently over smoke.

A tare that asks for time, but rewards it w depth.

Possibly the only time I make bad guys/demons/villians and make them the main character. I really disliked him for what he did to Rengoku. But if you know his backstory, you may have a little bit of empathy for him.

Anyway, the reason why he appears is because my newfound anime lover friend @zappletale prefers demons over pillars. Our short lunch today was almost about anime only.

So another challenge to myself to continue my character pineapple tart quest. How? Did they shake off the 'cuteness' in associating with my foodart?

Oh for the friends who asked, these series I coloured the dough and painted the features with Ameri Colour Food Gel. A little goes a long way.

I finally have time to make a short reel on the process which can be up soon.

This has got to be my favourite Omakase now!

After three years as one of Taiwan’s most sought-after Omakase Teppanyaki restaurants, 明水然•樂 is making its grand debut in Singapore this December.

I had the pleasure of enjoying a 12-course set menu priced at SGD 138, featuring the group’s signature premium Wagyu and fresh seafood.

What I loved most is that each of the 12 courses is crafted with minimal seasoning to enhance the natural flavours of the ingredients, highlighting the chef’s remarkable craftsmanship. It was truly an amazing experience, and I highly recommend you give it a try!
